In universe, the answer to why is that it's a Jedi Temple Guard's lightsaber that Luke acquires and uses in between losing his first blue saber and building his later green one.
So it's a double-bladed one?
I've been viewing the Star Wars comics and I find it strange that in the comics, Kylo is so absurdly powerful, while in the movies he is so weak.

All force users are. Live-action has limitations that animation/comics/books just don't. Look how much more impressive Kanan and Ezra from Rebels are than anyone in any of the films, and in-universe, they're nothing special, jedi-wise.
The Knights of Ren are also supposed to be almost as strong as an Inquisitor, and in the movies all they do is arrest Chewbacca.

Still, I have a hard time believing these guys were a threat to Cal Kestis or Season 1 Kanan.

Inquisitors are more than a match for the sort of Jedi who survived Order 66 through luck, rather than skill. Against an actual competent Jedi who's not a Padawan, or someone who's not a Force-user, they go down fairly fast.

Cal defeats their 2nd Best.
and that doesn't even go into the moment they fight some with a lightsaber they are screwed despite the fact they are called Knights of Lightsaber that don't use lightsabers
Tbf a Lot of them are just random jedi and padawan tortured and indoctrinated into the empires foots. Their not exactly the gold standard of the jedi.
And since they aren't really taught anything about Sith practices they are basically just angry people with lightsabers. For anyone decent, there is Darth Vader, so they don't need much.
Fallen Order also shows The Inquisitor Academy being thoroughly destroyed. Presumably Palpatine saw no need to rebuild it.
As weak as they are, they are still strong enough to be a threat to Cal Kestis.

Apparently a talent agency representing one of the actors in The Mandalorian accidentally leaked some information confirming something that everyone kinda already knew about the next season. You can probably guess what from that, but spoilering anyway: Temuera Morrison will be playing an older Boba Fett, not a surviving clone trooper. This was from them updating his credited roles on their website; they swiftly deleted it but the internet had already shared it everywhere by then.
Nice to see him back in Star Wars.
Admittedly Star Wars just movies versus the add on of ancillary material is... interesting. Going by just the movies, there's zero reason to think the Republic or Rebellion ever had child soldiers or anyone under 18 fighting for them, and (until the ST) Force powers seem relatively tame.

Looks like he’s no longer Mandalore.
In the sense that it will be extremely unlikely for him to become it like in the old EU now.

I mean, how would he? Boba only became Mandalore very late into his life in Legends, long after the events of the OT etc.
Well if this was the old EU, through being an invincible unstoppable barbarian soldier God who can take anyone down no challenge I believe.
A dialogue that I imagine.

Honestly, I personally mainly read some of the older stuff (including the story set shortly after he got out of the Sarlacc) and he wasn't really "invincible" at that point.
He was always portrayed as competent at his job, but the whole "invincible whatever thing" was likely a product of Karen Traviss' pet project.
