The tracking shot through the nightclub in GoodFellas. The tracking shot in, I believe, just about every Paul Thomas Anderson film except the most recent one, Phantom Thread.
The Steadicam shot in The Shining is pretty brilliant.
And if I had to pick one P.T. Anderson tracking shot it would be the one that opens Boogie Nights, goes snaking through the nightclub and introduces every player b/f ending on Mark Wahlberg as Dirk.
The one from Serenity comes to mind. Introduces several characters in a way that feels natural, and shows off the updated ship set.

Exactly What It Says on the Tin. Long takes (also known as The Oner) are pretty hard to shoot and very easy to screw up (looking at you Last Airbender), so the ones that work are a really awesome sight.
For me, I'd have to go with the HALO jump from Mission: Impossible – Fallout:
Bonus points for Tom Cruise actually doing a jump like that for real.
