Edit: Oh, wait. Are you talking about Cammie's comment about alcohol? She's correct. In the UK, a teenager is allowed to publicly consume alcohol with a meal (on licenced premises) from the age of 16 as long as they are with an adult who purchases it for them. That's the case for England, Northern Ireland, Scotland and Wales.
I assume from your England & Wales comment that you tried to Google it. That might confuse you: England & Wales are legally covered by English law, but Scottish law and Northern Ireland law are technically separate. That allows them to make different decisions for law if they want to (and there are some significant difference in places), although in practice a lot of laws are the same (such as the one Cammie mentions in the episode).
Fun fact about UK drinking laws: Cammie would have been allowed to drink alcohol in private since the age of five. Whether or not she had parents who allowed it is another matter, but they wouldn't have been prosecuted if she'd spent a Christmas having a glass of alcohol with the family Christmas dinner at the age of, let's say, eleven years old.
This episode gave me the impression that they use Valentina when presenting as female, but Val is okay when they present as male. They have been very insistent in the first three episodes that people not call them Val. The only time they gave permission was in the Ether when they were presenting as male.
Because they've been so insistent on what their name should be, I've been trying to stick to Valentina. Based on this episode, I'm only going to use Val with reference to when they present as male. I'll revisit this as and when Valentina gives us more information.
The Union Holon went for a module that's stored in the Holon's chest cavity, after it ripped off Cammie's head. Also, Cammie was acting blinded, so once the head unit was severed it was non-functional. Cammie's consciousness was clearly still within the main body. It looks like the Holon 'brain' is in that chest module, and that's the bit that needs to be protected. So, the question is... how well protected from attack is that chest module. I'm assuming there will be some stronger armour in that region given the importance of protecting it.
I wonder if we'll see Cammie make some sensor modifications to the Holon bodies so that if a head is ripped off in future, the secondary body sensors can kick in and the pilot won't be blinded.

On the topic of the show itself I found it interesting that in Episode 3 that Valentia referred to “what the Union did to people like me”. That’s a red flag for me that the Union government likely has an official policy against transgender/gender fluid people, and from there going down the rabbit hole to who else the the Union might discriminate against doesn’t take a lot of imagination.
Yes, Valentina and Yaz were having an argument about how they'd suffered, and this episode used the Ether to confirm two things about them: Valentina has confirmed they are gender-fluid while Yaz has confirmed that she identifies with wearing a hijab. So, while the original argument may suggest discrimination against women with a hint that there's more to it than that, what this episode is implying is that these two have suffered because of discrimination against LGBTQ+ and religious identity (whether some or all, is hard to say).

The reason I've been using a gender neutral one is because, in interviews, the creators of the show have been using the gender neutral pronoun for them (apparently — I actually haven't seen any interviews myself, but someone in an earlier post mentioned it). So, I'm going by that for now until we know for certain.

Neurotransmitters are chemicals produced by neurons. The purpose of neurons is to transmit information and they do that by releasing neurotransmitters from one neuron to be received by the receptors of other neurons (think of receptors as docking stations for the neurotransmitter molecules).
Neurotransmitters that most of us will have heard of even if only in the news: Dopamine (the 'feel good' one, it's a motivator that associates a person with a certain activity — drugs, food, sex, etc), glutamate (the brain's so-called 'on switch', this triggers neurons to fire and release neurotransmitters), serotonin (the mood affecting one: too little risks depression), and so on.
The human brain only finishes maturing at the age of 35, and the ageing process does slow down the rate at which neurotransmitters are produced. Now, this doesn't start at the age of 35, it's life-long: infant and toddlers can form a million neural connections every second. An adult in their early 20s (whose own brain is still developing) can't do that.
Science currently thinks that it's the slowing down of neurotransmitter creation with age that leads to declining cognitive and memory function. As you can imagine, if neurotransmitter function stopped completely, so would our brains. Also, everyone isn't going to have the same rates — everyone's brain is different.
Based on what we know so far, I'm thinking they may be talking about brain development finishing at the age of 35 but to claim that the human brain stops producing neurotransmitters is wrong to the best of my knowledge. However, if gen:LOCK technology depends on a certain rate of production of neurotransmitters, it might be possible for humans to age out of that. But, my question would then be... which neurotransmitters? Glutamate, perhaps? (As the brain's 'on switch'?) It's all a bit pseudo-science at the moment.

Anyone notice how the Union holon had some spastic movements in its head? That signals to me that the Union hadn't perfected the gen:Lock technology, or it's trying to jury-rig a method to force incompatible people to gen:Lock. The entire attack on the Ether was probably a decoy to give their new holon a field test.
As for Val's genderfluid reveal, I will openly admit that I am a bit like Kazu in that I'm not entirely comfortable with the concept, but I think the presentation here wasn't forced or shoved into people's faces as many of the complaints say. Kazu noticed something that roused his curiosity and asked, Val explained, Kazu was confused at the concept (strange how somebody would not have at least some awareness of this sort of thing almost half a century into the future, but who knows), and they clarified. It was also interesting in that they showcased just how far physical alteration tech is that Val can casually talk about switching back and forth and had done so multiple times.
I don't think they're dead. When the news station's building was attacked, Mum started walking with purpose and that's the last we see of her. I think she recognised the threat and got herself and Dri out of there.
The question is whether or not they managed to get out of Union territory in time. If they didn't, I wouldn't be surprised if they're leading a resistance (in the form of getting refugees across the border into Polity territory). If they did, it'll be interesting to see what they've been doing with themselves all this time.

That begs the question of whether Weller knows they're alive and isn't telling Chase, or whether everyone just thinks they're dead (and since they think Chase is dead, they've got no-one to look for).
Can I just say that I've only just noticed the pun on the first episode's title, and I can't believe it's taken me this long to notice?
The episode is called 'The Pilot' — which is what a first episode is, and it's what Julian Chase is.
