Tofu's pretty great. Just don't think of it as a meat substitute but rather an ingredient in its own right.
Tofu will never be steak or ham or chicken. And it does not need to be either.

I find crumbled tofu to be a good filling in recipes that use ground beef. Now it will never take the flavor of ground beef and it will never taste of ground beef, but crumble it up, bake it to remove moisture, and use soy sauce/nutritional yeast for flavor, nutrients, and texture, and it makes a decent filling for tacos, chili, and marinara sauce. Less noticeable in such dishes, since they're already loaded with other spices to provide flavoring.

Friend of mine would just toss in tofu with jarred salsa and a drizzle of honey in a wok for a nice sweet and spicy thing.
