This show tends to make up storylines and characters whole cloth. The other Belmonts not having a supporting cast doesn't really hold water as a reason for skipping everyone else.
Especially since the setup of "lone badass travels the land getting into adventures and righting wrongs" has been a tried and true storytelling staple since the dawn of...well, storytelling. I don't think many would object to an animated installment that can be described as "Samurai Jack: Castlevania Edition", for instance. And if any Belmont would be a perfect fit for that recipe, it'd be Simon.
They wanted to do a show with Richter, there doesn’t need to be anymore reason than that.
If they wanted a Soma show they would skip all the way to him or if they wanted a story about Leon they would make it a prequel.
Instead they made a show about Richter because they wanted Ricther to be the star. There’s no complicated reason or justification for it.

If anything going back in time is more likely then the alternative, the later the timeline gets the harder it is to have a narrative similar to what we've had. A WW 1 or 2 Castlevania would be a little weird, I don't know if they'd want to go with it.

The way I figure it, they'll probably hit the Sorrow games after they're done with Richter's show. But, chronologically, that's the most distant future of the CV timeline. From there, they'll have two options.
- Call it a complete trilogy and walk away.
- Go back and start doing interquel spinoffs featuring other characters and game ideas from across the CV timeline.
If these shows were being made by a single auteur acting on a unifying creative vision, there'd be a strong change of doing option 1. But they fired the auteur and gave the show to a new creator for Richter's series, implying that producing content takes precedence over artistic vision; In which case, they'll probably keep right on going until Castlevania stops being marketable brand.
So there is a pretty decent chance we will see a Simon show or Shanoa show or Jonathan Morris show or something. In, like, 2035.

Richter is the last major Belmont to use the Vampire Killer and, in the games anyway, take on Dracula before Julius in '99. After him are John Morris and his son Jonathan. I picked up the Dominus Collection and I'm playing Portrait of Ruin right now so admittedly both recency bias and a desire to see the World War II backdrop explored in the Castlevania setting makes me want to see an adaptation of it. Unfortunately, someone high up in the creative process has a thing for Alucard so that's probably not happening.

We see what Trevor and Richter are like, though I can't help but wonder what Simon was like. I keep picturing him as being gruff and serious, but that's pure speculation, mostly based on him taking his job seriously, and since that job is killing the undead, I just picture him not being super upbeat.
It is a shame we'll probably never actually see Simon.
Juste, who's one of the least notable Belmonts, is getting face time, but not Simon?
Then again Simon is the Belmont. The one that most people with only a minor bit of knowledge of the franchise know about, so I guess you could argue he doesn't need it.

Please remember that, ultimately, fictional works of entertainment are just that.I'm not sure that Metal Gear would benefit from an animated adaptation anyway. There's a lot of room in Castlevania's thin story to write characterization and your own plots. Metal Gear is so full of story that it's practically bursting. A faithful adaptation would have much less time to do it justice, too.
