I'd argue Scathach isn't too one-note, but that's another can of worms I'm not opening.
Fate is a series that relies heavily on characterization and aesthetic; you either need an amazing design, or damn good character writing. And honestly, I'd argue the former is more important given character design is something universal as opposed to characterization, which only fans can really appreciate.
So if a character has a boring design, 9/10's they're going to be ignored. Just look at how many people prefer Gudako over Gudao simply because the former is drawn cuter. Generic Cuteness definitely plays a role there, but it illustrates the point of how important design is.

I'm gonna say Mandricardo and Emiya Alter.
The latter people have written about at length, as for the former I can't be the only one who thinks his head is just a tad too big for his body.
Yeah... Mandricardo's art is a little Off-Model, but he's still beloved nonetheless. I'd also say any Servant drawn by Koyama Hirokazu, since their arts can get especially Off-Model at times, particularly the mouths, yet a lot of them are beloved nonetheless.
- In the event you forget which ones were done by Hirokazu: Wodime, Scathach, Skadi, Saberlot, Musashi, Medea Lily, Quirinus, Romulus, and Mata Hari.

I always felt if we didn't know the former was (alternate) King Arthur he could have passed for another Saber-type servant. Although it would have Gawain being able to switch places with Arthur make more sense since the two do look really similar, although Gawain has a more "unique" design imo.
Arash's design was consistently depicted by Nakahara for several years so that's a no.
Fionn's designed by the Chrono Crusade artist.

I mixed up the Lancelots then. And mistakenly added Fionn. On that note though, Moriyama Daisuke's art could apply too. They've only done d'Eon, Osakabehime, and Fionn, but again, the art can seem Off-Model at times, once again including the mouths.

Being the non-evil-ish Only Sane Man in the Round Table helps too.
I wouldn't say a male Saberface is a super basic design, especially when factoring in the arm.
