Gavia has never exactly been a pacifist (see her first entrance), and she's seen the results of this bastard having his idea of fun with her friends, and just how horrible his boss is. This seems entirely in character, if you accept that she has a hard core that's been exposed by recent experiences.
Though it could as easily have been Sedna with her hands round said boss's throat.

I'm guessing that at least she recognized him. Until we get more info it's all just wild mass guessing. Maybe Church was some sort of (infamous?) mercenary and Alice was sent to deal with him. Now that she realized just how hardy he is and how he won't be making the same mistake (possibly of underestimating Alice) twice, she'd rather have just left and not had to deal with him.
