There's just no place for it. It's dumb. Like, sure, I could imagine some 700-year-old foggy that has no bowel control doing some shit like that and just magic-ing it away. Because fine, people age and can't control that and you'd use magic to solve your problems at that point. And that'd be relatively rare enough that people would be bothered but probably just politely ignore it because of circumstance and it not being a daily event.
But... every day life? As normal culture? Holy crap. NO.

At some point JKR lost the plot, otherwise she never had it and just managed to hide it for 20 years.
However given how long the game has been in development and that their primary sources would have bathrooms and restrooms in them I'm going to go out on a limb and say the developers have put in plenty of plumbing into Hogwarts.
I remember the good old days when J.K only tweeted about Wizards shitting on the floor instead of dehumanizing people.
But legit, making a game with people shitting on the floor would be hilarious.

Sort of. Victorian era spans 1837 to 1901, which is most of the century. Before that you're in the last legs of the Georgian era (George III, George IV, William IV).
Mainly splitting hairs, since I doubt this Hogwarts-game will delve too deeply into the real-world politics of the time. But in terms of some big changes that depend on when exactly you set a game in the 1800s: Napoleonic Wars run 1803-1815, and after that Britain is mostly uncontested as the naval and global powerhouse. The Metropolitan police is founded in 1829; in 1856 a parliamentary act is passed decreeing every county in England and Wales needs a police force.
Or, if you'd like a flash of pop culture, Pride and Prejudice comes out in 1813; Oliver Twist runs as a serial from 1837 to 1839; and Sherlock Holmes debuts in 1887's A Study in Scarlet.

Correct. As far as the Basalisk goes, Hogwarts' architecture apparently updates as need be over time. While the Vault of Slytherin was in the plumbing during Chamber of Secrets, it didn't start there and became part of the plumbing as that was added to Hogwarts' architecture. We also do know that it's been part of the plumbing since AT LEAST the 1920s so it's possible that aspect of Hogwarts is still the same by whatever game this is.
I wonder. Do you think the game will go for a 7-year time span? All the Hogwarts years in a long epic story? Or will it just depict only the last few years from around 4-7?
I think it would be interesting if we could design our characters as an 11 year old and slowly age them over time. Bump back to a character creator at the end of every year with some different options. That would be really impressive if maybe a bit outside of the scope of a AA game title.
Too bad about this game being post-plumbing in Hogwarts. The devs could have gone the Red Dead Redemption 2 route and have it be a random event as your character walks around (and you would lose house points for not cleaning it up)
As for the whole JKR debacle, since the game failing won't affect her, but it will affect the devs, I'm willing to separate art from the artist if the game interests me once more details come out.
Also, remember the even more good old days when JKR only tweeted about actual interesting informations and trivias about the franchise and the wizard world that don't concern "clearly-will-be-heavily-debated" topics such as race and gender/sexual preference?
I think the downhill began when she started to delve into such topics and keeps going on about it.

The wizarding world and the human one operate on different wavelengths, and going off what we hear from wizard who grew up exclusively in magical society they don't understand human society or technology very well. It wouldn't really fit for the game to touch on politics like the British Empire.
