The problem with the Daring Do thing is that it's not internally consistent either.
For one thing, how did she get to be such a good writer if she devoted her life to adventuring? How does she have time to write so many books at all? Why does Ahuizotl provide adventures on demand to convienetly fit her writing schedule? I mean, what's she going to do if the next book comes due and Ahuiztol didn't pull anything yet?
But even if you ignore that, the big issue is why noone noticed all this stuff going on. Why has noone else involved in the stories ever had any contact with civilization? It's simply not plausible that the truth wouldn't get out.
Blind Final Fantasy 6 Let's PlayWell, there's a lot of cases of books getting popular without the writer having much experience, or without the books even being all that good. And it's possible(I like this idea myself) that she is a writer by trade, and happens to occasionally just get caught up in shit. We don't know how long she had that ring, either, so it's possible the adventures don't happen often, and some of the books are genuinely fabricated(Write what you know, and all that).
I mean yeah, the episode did imply that the books are based on actual adventures, but it's still only pulling from a single source so it's not exactly hard evidence for it.
Overall I don't think I'm a huge fan of the episode; the bait-and-switch plot that lead to it all left me with a bit of a sore neck and the overall change in tone from the rest of the series felt starker than normal, but I don't personally have an issue with it's existence or canonicity.

It's possible its loose enough that she can wait until another adventure happens before writing a new book. Or, given how consistently Equestria is in danger, she can reliably expect to have enough material for a new book every year or so and this year was unusually slow, hence the delay. She could also have had a huge backlog of adventures before deciding to document them, and only recently caught up.
1. She's been a writer longer than she's been an adventurer. This was heavily implied in the episode.
2. Writing is really flexible. She can easily adapt.
3. She has absolute control over what she censors.
4. Ahuizotl publishing his plans is likely to bite him in the ass and also requires him admitting that he regularly gets beaten by an author. I don't see his ego taking that.
5. People are well aware that Nazi Germany was real while still believing that Indiana Jones wasn't. There's no difference.
6. Celestia is aware of Daring according to Word of God. Celestia has successfully covered up bigger stuff.
1. I don't remember this being implied, but it's been awhile since I've seen the episode, so I'll take your word for it.
5. Nazi Germany wasn't being constantly thwarted by a specific very recognizable person who proceeded to write books about their adventures that anyone even tangentially involved would recognize as matching the actual events.
6. I'm not sure why Celestia would bother covering up Daring's exploits when Daring apparently doesn't care that much. Yes, she prefers a bit of privacy, but if she was seriously concerned about being found out she wouldn't publish all her adventures. Unless I'm remembering wrong, she didn't seem upset that RD and the rest found out her secret identity, she was just annoyed that they kept following her. Daring Do remaining unknown is probably a result of taking place in remote areas, not because of any cover up.

Of course not. Publishers are really good at hiding the fact that their stories are true. Supposedly, it helps sales.

Assuming she didn't alter events too much, Rainbow just shows up without any buildup midway through the story and sort of forces her way into the plot (fu fu fu) with her friends.
Do we know that Ahuizotl's plan involved the sun in any way? All I remember him saying was that the area would experience 1000 years of sweltering heat, not that the sun was the source of that heat. Maybe they live right next to a previously unknown volcano or something.
