Hyde is supposed to be about anonymity, what would a person do if they had access to a perfect disguise. Different face, physical shape, different everything. Having such a thing would allow them to be unbound by society, do things deemed unacceptable by it, and get away with doing so. Secret identity.
The book makes it vague whether or not the whole "split personality" thing even took place, and the only thing the potion clearly gave Jekyll is a different appearance.
The Hulk(and every adaptation of Jekyll and Hyde with the Hulk in mind) misses every point there is to be missed. Hyde was not a grotesque generic monster, he was described as a young man with an underlying, subtle disturbing thing about him the POV character could not put his finger on. He was not a giant dumb brute, but rather a thrill-seeking killer. And neither side was innocent. Jekyll is not the good side, his repressed thoughts is what truly gives Hyde life, he knows it, and is fascinated until he finds himself consumed by it. It's not good vs evil, it's suffocating repression versus lack of any restraint at all.
The Marvel comics character that fits this criteria the closest is Green Goblin(sometimes. Not every version.), not the Hulk.
The musical is the only adaptation I know that truly gets it, despite some problems and dubious changes I adore the musical for getting it.
