That's... you know, that's a really good question. I think technically you could replace the ballet with something else and still have the same story, but it would completely change the atmosphere, which is a huge aspect of the story in itself.

The only thing from Princess Tutu is an utterly hilarious snippet of Narration talking about this guy. It has a quote by the author, followed by a very unimpressed woman saying, "Said the author, who was supposed to be dead!"
It always struck me as like, an actor ad-libbing during a stage performance.

I think I got about halfway through the first season if I remember right. And yeah, the ballet isn't integral to the plot per se, but the aesthetic permeates the show so heavily that if you replaced it with anything else it would feel completely different.
And now, I really need to get to sleep because I have work tomorrow.
