Unless stallions also give birth, I don't think having little understanding of gender preferences is possible.
I think what he means is that while ponies would recognize that it takes both sexes to produce children, they don't have very strict classifications of sexual orientations. I.e. pretty much everyone is attracted to both mares and stallions, and those who are exclusively attracted to one or the other are the minority.
Personally, I tend to assume that the demographics in terms of sexuality are roughly the same as they are in reality, with the main difference being that sexualities don't carry any additional cultural baggage; e.g. "lesbian" means only "mare who's exclusively interested in mares" and "gay" means happy "stallions who are exclusively interested in stallions". So basically no concept of Camp Gay, Butch Lesbian, etc. Stuff like mannerisms and appearance exist independently of sexual orientation.

But seriously, an understanding on where babies comes from might color their preference a little, but I don't see it overall.
But that's because fanfiction has tainted me. Canon doesn't support this at all and most evidence points towards heteronormity in Equestria.
My main reason for it is that I tend to assume Like Reality, Unless Noted in regard to how they work on a social level.
Yeah, I'm all for progressive attitudes and such, but I find the idea of a society where everyone is bi fairly untenable. Assuming monogamy is the norm, which I think is fairly reasonable give what we've seen in the show, it would automatically destabilize itself within one generation. Babies are kind of important to society after all.

If we're talking about bisexuals, I am one. I am extremely shy around women but also, with my BFF I can't even look him in the eyes because he's so adorkable! But I believe that everyone is bisexual.

That and some people just... aren't bi. I mean, if you are, that's great, but I always find it sort of weird when people hold up bisexuality as some sort of ideal.
I wouldn't say so. I think that more people have bisexual urges than they'd want to admit, but saying that everyone does is an overstatement.

None of the CMC bothered to consider that Cheerilee or Big Mac wouldn't be interested in Mares or Stallions(Which granted, if everypony were bi would admittedly be a non-issue), all of the ponies suggested for Cheerilee were Stallions, and all of the couples we saw, with the exception of a few crowd scenes, were heterosexual.
Now, granted, we can say this is just what we saw for the sake of clearing things with the network, which like it or not would have to deal with a lot of crap for showing openly gay couples in a children's show, but the fact is we can only realistically judge based on what we've seen, and what we've seen is heterosexuality. A good deal more of it than in actual horse populations, in fact(Which by their nature - packs of females with one male and small, bachelor herds of exclusively males) tend more towards homosexual than heterosexual activities. To say nothing of the fact that monogomy isn't at all on the table. Fact of the matter is, we really have to judge them based on human social norms.

But mostly, this is for my N Hi E fanfic, where one of the visiting humans is a professor of culture, learning all about the differences between their races.
@Lum: Which is actually all the more telling of ponies' natural biology/sociology. If they default to assuming she'd want a male partner without any conception of gender preferences, then either their ingrained instincts say that heterosexuality is the way to go, or they've learned it from media/their families, suggesting if nothing else that it's the more widely accepted norm.
