In my experience as someone with two middle names, people only tend to want one middle name on those things anyways.

Reaction Image RepositoryWell, she seems to be the head of the weather team. While probably not a PHD, she probably has some kind of degree pertaining to meteorology.
Though the 'main' weather crew could easily just be kind of a practical course and not touch any of the science behind it. My headcanon is that the weather actually is moving on it's own but the ponies circumvent it for their own needs, so there's a division of the Weather Ponies(the High Altitude Team, or the HAT) that measures the upper atmosphere to predict what weather will be naturally occurring sio that they can use it, and determining just how much they can bend the weather and when they need to let it through. Figuring it out requires a lot of very tricky math and is generally considered a pretty academic career, though HAT members also need to be in good shape to be able to handle being that high up for longs periods of time.
Those of you who read the Hoops and Dumbbell blog may recall that Hoops is part of the Manehatten HAT. He is a math genius. He is a giant doofus in every other respect.

Just because she knows a lot about how the weather in Equestria works does not mean she's a COMPLETE expert on the weather.

AJ grew up on a farm, that's all the edjermacation she needs. Fluttershy's ways with animals comes naturally, so unless she's a vet (inconclusive), there's no need for a degree. Rainbow, again, "kick the clouds until they do what I want." considering her main goal is to be a fancy flier with the wonderbolts, she probably hasn't focused on her education. Rarity may or may not have gone to beauty school or art school to get tips on dress making, I have no idea. Pinkie throws parted for a... Living? Does she get money for that? Either way I doubt she has a degree in party planning, she's too immature for college. But Twilight? She's a genius who cared more about learning than anything else for years. She has a degree in something, for sure. Unless she's only 18 or something, but even then, I had an associates degree at that age.

Besides, I think they're all meant to be teenage or young adult ponies, with not enough time to get an actual degree. Twi was the closest though, until the whole "Princess" thing probably derailed it.
IIRC Rainbow Dash dropped out of school.
Anyway, I think Twilight has the equivalent of a PHD. The rest, probably college education at best. I think Rarity is the second most likely to be educated.
