The only Pinkie Pie ship that I can really see working without a lot of development is Pinkie Dash. RD is one of the few cast members who could possibly match Pinkie's energy level.
As for my shipping, I basically tend towards plausible ships that still offer interesting character interaction. Just about any ship can be made interesting, even if the characters involved are fairly stable. I mean, I'm writing a fic about two relatively stable characters (Twilight and Applejack) and I managed to hit the 200K word mark without even having to do stuff like love triangles or drama or anything. You can mine pretty much any character combination for a good story if you work hard enough.
I've never been big on Crack Ship stuff outside of Rule of Funny because in most of them the premise tends to be more interesting than the execution. Most of the time if somebody writes like a Zecora/Discord fic or something it'll be based almost entirely off of the novelty of shipping two otherwise unrelated characters rather than focusing at all on what that relationship might actually look like or how it might come about. They just start with "X and Y are a couple! Lolz ensue!" without really bothering to justify why.
Just because she's ubersocial doesn't necessarily mean that she's incapable of having a committed relationship. If anything she might want some sort of special relationship with someone that she doesn't have to constantly reinforce with FUN FUN FUN. She sort of has that relationship with the mane cast, but even then she has attachment issues. I could easily see her latching onto one significant other that's special to her in that she trusts them to care about her even when she isn't being entertaining.

You know, just because she wants a relationship with everypony doesn't me that we have to assume that she wants them all to be romantic/sexual.
Not that it really matters when shipping is involved since it's mostly about what would make an interesting story and plain old wish fulfillment then anything else.
I don't see why she can't love everyone and still have a special relationship with a particular pony.

Out of the cast, Pinkie is the most likely to be Poly-amorous, but it hardly precludes her from wanting an exclusive relationship. As pointed out, caring for someone in a platonic sense might not have anything to do with how she feels romantically. I actually think it would be interesting to explore the concept of Pinkie getting into a relationship with a "boring" pony and finding that it's actually good for her to have someone stable to rely on.

The only exception is possibly RD, but I see that as strictly platonic, personally. Most popular shipping is based on character pairs that have either lots of on-screen chemistry (ala Appledash or Rarijack), or complimentary archetypes (ala Scratchtavia). Or they just look really good standing next to each other, ala Lyrabon :P . Pinkie doesn't really fall into either of those, since she lives in her own little world, which I think is why she's not an especially popular shipping subject.

Honestly, I think any inter-mane six ship requires quite a bit of groundwork to be laid. Case in point, I consider Twijack one of the most plausible pairings, and my fic about it spends like 40,000 words just getting to the point where they agree to start going out romantically.
Well going by purely canon, that aren't really any solid romantic relationships among the mane 6.

And yet Lyra/Bon Bon is so common and focused on the their relationship, while Lyra tends to be portrayed just as excitable and childlike as Pinkie.
It's not about being excitable and childlike, it's that Pinkie wants to be involved in everypony's life.
