Probably because it's not actually a plot hole.
At best, it's a character making an oversight, but Gothel didn't even know Rapunzel had any curiosity about the lanterns until her 18th birthday. And while Rapunzel was especially curious about the lanterns, it wasn't the only thing she was curious about regarding the outside world.
But even regarding that, I'm not sure why it would be considered a plot hole rather than just a thing that happened in the story.

In fact, as was proven by the story itself, it's a liability to her trying to keep Rapunzel in line.
I'm sorry, but I can't agree on this.
She kept it the same day for the same reason an all consuming space Empire didn’t bother shooting a stray escape pod. Ya gotta get the ball rolling somehow.
There's no reason for Gothel to keep Rapunzel's birthday the same, but there's also really no reason for her to change it, at least initially. She didn't know the king and queen were going to launch the lanterns, and when they did, she didn't know that Rapunzel would take any more interest in them than in the moon or sun, or the changing of the seasons, or any other regular event. For that matter, there's no reason she had to build the tower with a window (the tower's only window, mind you) facing the direction the lanterns came from.
There's really no reason for Gothel to have taught Rapunzel that a birthday is even something you celebrate. Rapunzel has no source of outside information other than Gothel and the books Gothel has given her. It would have made perfect sense if Gothel didn't even know when Rapunzel's birthday was. That said, the plot still could have worked just fine, with Rapunzel so fascinated by the lanterns anyway that she had a powerfully strong desire to see them up close.

Seconded. There's not much reason for her to change her birthday, so her not changing it isn't a plot hole.

...Is that meant to imply that Eric would have raped her on the spot if she was naked there? Because I don't think he's that type of guy.

Thinking about it now, Ursula probably would have still wreaked havoc if that had been the case.

On a similar note the clothes changing back in Cinderella wouldn't have mattered if she had taken them off beforehand, and that movie would have been over faster.
Funny how everything reverted to it's original state except the glass slippers. Were the slippers Cinderella's normal shoes transformed, or were they a creation of the Fairy Godmother, do you think? I don't think the film indicates anything one way or the other. As they are magic, though, it's entirely possible that they were just working in Cinderella's favor (in which case, the Fairy Godmother had more on the ball than previously advertised).

I think I assumed that they managed to stay transformed because they got separated from each other, but again, it's not really explained.
I thought it was because it got separated from Cinderella.
Optimism is a duty.The movie also could've been over faster if the Prince could just remember her face and not have to go exclusively by foot size.
Then again, the remake kind of implied there was a sort of glamour spell going on...

Or he's smarter than we give him credit for that, once you line up all 5 billion pretty blonde women in the kingdom and start trying to compare them to your memory, your memory is going to start getting really hazy and doubt will creep in after awhile. Irl it's actually one of the reasons why Witness testimony can sometimes be thrown out in court cases; our memories can actually be extremely unreliable under certain tests.
'She fits this shoe' is a far more concrete detail to go on than 'I think her nose was a bit more pointed...Maybe?' from your memory. Granted, a shoe size only narrows the field so much but it's something more than nothing.

Death is a companion. We should cherish Death as we cherish Life.Prosopagnosia, or face blindness, is an actual cognitive condition; I personally know people with it. The Prince being face blind is a perfectly good Alternate Character Interpretation.

Tangled fans ignore the stupid plot hole of Gothel never changing Rapunzel's birthday, which pretty much enables Rapunzel's curiosity about the lanterns and thus letting the plot happen in the first place.
My vote goes to Ursula.
Indeed she did.
That's why she had Flotsam and Jetsam restrain Flounder and Sebastian when they tried to dissuade Ariel from signing the contract.
When she turned Ariel into a human, of course Sebastian and Flounder were not going to waste a second in helping Ariel to the surface.
