Unlimited (Gold/Boss in other games) Mode is a concept from Blaz Blue. You have a normal character, and their normal balanced moveset. But then you have Unlimited Mode, representing the character unleashing their ultimate power. They get more health, more attack, and their attacks are reworked to be completely busted and unfair in normal circumstances.
Blaz Blue used them as Story boss fights, or in some occasions, let your character use the mode, so you'd have a balls to the wall fight with both parties throwing out overpowered moves.

Sort of. There are multiple teams at Arc System Works. Team Red, who develop Guilty Gear, Team Project BB, who developed Blaz Blue, and other various teams, one of which is developing Dragon Ball Fighter Z. So it would depend on who gets development duties. What's more, the head of Project BB, Toshimichi Mori has implied that his team is working on a non fighting game project or a new IP.
So, since we're on the fighting game topic, here's what I'm expecting.
First, the roster. There's no chance in hell we aren't getting teams RWBY and JNPR, since they are main characters. At the very least, I'm also expecting the V1-3 villains- Cinder, Emerald, Mercury, Roman, Neo and Adam. That's 14, with I think isn't unreasonable.
For later DLC and such we could get Sun, Penny (for important side characters), and Velvet (since she's a fan favourite). And Neptune, I guess. Maybe the adults (Qrow, Ironwood, Glynda, Ozpin) if we're lucky.
As for their mechanics, assuming it is Arc Systems Works we're talking about:
- Ruby- super fast dashes, in literally every direction (up, diagonal, down in the air). Maybe to the point of almost teleporting. Projectiles that push her around. Instakill/Astral Finish (come on, every Arc Sys game has those) would probably be either her tornado from food fight, or her combo on Beringel (trip, blow into the air, impale)
- Weiss- zonner, putting glyphs that attract, repel or hold her or her opponents. Maybe some mechanic based on her Dust usage, cycling through different types? Astral- summoning the Knight.
- Blake- Hibiki. Just...Hibiki. Astral- maybe her Elemental Clones combo from No Brakes?
- Yang- unless it will be standard for all characters, I'd give her something like the Awakening mode from Persona 4 Arena. When her health goes under, say, 40%, she gets boost in damage and some new supers she can't use in normal mode. Astral- sees that she lost some hair, so she goes full ORAORA on the opponent and finishes him with a punch that makes everything go white (kinda like in Yellow Trailer).
- Jaune- could see him as a counter-based character, since he's the most defensive of the protagonists. That, or if we're taking V4 into account, maybe a stance based fighting style where he goes between sword and shield mode and heavy sword mode. I also saw an interesting idea that, if this game is team based, like Mv C, he could be a character relying on his teammates assists to make strong combos. Astral- hm...this one is kinda hard, since Jaune didn't have many feats in battle. Maybe his combo against Ursa from the Breach?
- Nora- maybe she could charge her electricity with time, and then using it to up power of her attack or get super high jumps. Astral- the attack she finished Deathstalker with, smashing her enemy with a hammer from high up, using her grenades to accelerate.
- Pyrrha- actually, I would see her as the roster's grappler, since she's the only character so far who showed such moves in the story (like her finishing move on Cardin, or her lock on Cinder). Add to that her Polarity that could attract or repel enemies, and we'd have an expy of Iron Tager. Just...a lot more sexy. Astral- calling forth the gears from her fight with Cinder and crushing the enemy under them.
- Ren-...I've got nothing. Like, he doesn't really have a gimmick that would make him unique, since his Semblance is only useful against Grimm. Maybe, since it's negating emotions, it could make him more concentrated, making the world around seem to be moving slower (aka, Bullet Time)? Astral- martial arts he used against King Taijitu.
- Cinder- fire attacks that can be imbued to expload. Astral- burning enemy to ashes, like with Pyrrha.
- Emerald- maybe an ability to make faints, making the enemy think the attack is coming while it really isn't? Illusions are hard to translate into fighting games... Astral- could see it as one of those "different for every opponent" finishers, like, she shows the opponent a scene that's somehow relevant to them, but suddenly backstabs them.
- Mercury- controllable projectiles, like the ones he showed in the tournament. Astral- the combo he used on Yang.
- Roman- no clue. Making calling support from out of the screen? Or making Neo part of his moveset? Astral- jumping into a Paladin and smashing the opponent.
- Neo- a "get out from jail free" card in form of her glass illusions to escape comboes. Astral- blacking the opponent out, and then...stabbity-stab.
- Adam- blocking charges a meter that he can use on a powerful special move. Astral- iaido slash desintegrating the opponent.
Something like that.

Hello everyone. This is my first time posting in this thread.
I was at RTX so I figured I'd answer your questions about the Weiss trailer. Spoilers below so don't read if you don't want to know what happens before hand.
Yes the trailer is a flashback. What happens is Weiss is trapped in a snowstorm and is attacked by a bunch of white Beowulves. She fights them off but eventually gets disarmed and pinned. When they are all about to finish her off she calls out for Winter and the Grimm disappear, they were all just summons Winter made to train Weiss. Winter tells Weiss that if that is all she can do she will never be able to leave. It then shows Weiss waking up from the dream in her Volume 4 outfit sitting on an airship. The whole thig seems to take place before her father let Weiss go to Beacon and notably she has her ponytail in the back of her hair so this is before she started wearing it on the side as a sign of rebellion. And that's pretty much it.
As for the RWBY fighting, I am so excited! I've been following the progression of it very closely (as in I have asked Gray about it at both RTX last year and New York Comic Con) so hearing Miles tell us to pay attention to EVO is pretty much confirmation.
For the roster I would expect only around 12-13 characters. Since it's a new series they have to build everything from scratch and that number is consistent with Blaz Blue Calamity Trigger and Persona 4 Arena. I'm not going to guess at the roster besides that RWBY and JNPR are guarunteed.

Called it. The pony tail did look centred in the clip, so that doesn't surprise me. You didn't mention it, but there wasn't a scar, was there? After all, she has the skew-tail in the White Trailer, so this flashback must be about events that occurred before the White Trailer.
In that case, Velvet's Unlimited Mode is simple: permanent photographs.

Pyrrha was hooked up to an aura transfer machine, murdered by Cinder, and her ashes presumably inhaled by Ruby. This could open up the possibility for multiple Pyrrhas.
It probably wouldn't be too much of a stretch to say that Atlas, or somebody else, might be able to salvage the aura transfer machine and get a partial template or something of Pyrrha and build Mecha Pyrrha.
Cinder might have a portion of Pyrrha inside her, and Salem could extract this essence of Pyrrha and make Grimm Pyrrha.
Ruby's now got dreams revolving around scenes she wasn't there for. Perhaps Ruby's got Ghost Pyrrha attached to her?
As for Penny, I'm sure Atlas isn't going to give up on a weapon just because of one failure. So, possibly Penny 2.0. Or Phyrra-Penny.
Also, what happened to the bits of Penny from the Vytal tournament? Did someone other than Atlas retrieve them? If so, perhaps we could get counterfeit Pennies.
And then we get a battle of multiple Pennies and Pyrrhas.

And like that I step over the line from "overreacting" to "perfectly valid albeit somewhat presumptuous fear."
