Honestly? If that guy is her father, I'm expecting him to be the peaceful leader that the White Fang coup deposed (and he's been forced to live in Menagerie but has some kind of highly respected position there). Blake turned on her father by siding with the new leadership (which would fit with the power abusive people have over their partners), which would 'legitimise' the new leadership if they could claim family of the old leadership were supporting them; it's therefore through watching Adam slide into darkness (which acts as a personal microcosm of the wider White Fang fall into darkness) that she's had second thoughts and defected from the organisation.
It would explain why Blake said she was 'born into it' but in a 'sort of' way. We already know she was in the White Fang prior to the coup, and we know the peaceful leader was deposed, but nothing was said about that leader being killed.
It could also make him the Cowardly Lion and therefore a friend of Ozpin and the Benevolent Conspiracy - which would also explain why Ozpin tried to reach out to Blake (he knows more about Blake's family than Blake realises).
I do agree that Cinder was sticking with what she knew. She'd only just obtained the full power and immediately had to fight Ozpin followed by Pyrrha. While Pyrrha wouldn't have been in Ozpin's class, she was highly talented and experienced and had an insane Semblance. Cinder was better off sticking with what she knew, and she still needed help from the dragon until Pyrrha's Semblance broke.
I do continue to maintain, however, that Ozpin was massively holding back and that there's a reason that the scene cut from him swiftly overpowering Cinder's full force was a white flash, the same as the white flash that caused a scene change from Ruby's power flaring up. Ozpin wanted Cinder to think she'd won.
And... not only does Qrow not act or sound like he thinks Ozpin is dead, but he knew something that made him pick up that cane and carry it with him wherever he goes. That cane is the key to what Salem is searching for (and the key to what's happened to Ozpin). Qrow may not fully understand what's happened to Ozpin, but he clearly knows just enough to protect the cane.
If Cinder was the Summer Maiden, I think Ozpin would have known who she was. Of course, we actually don't know what Ozpin knows about Cinder, given that we've mainly been privy to Glynda, Ironwood and Qrow's thoughts rather than Ozpin (we know they didn't know Cinder enough to identify her, which also suggests to me that she's not the Sumer Maiden).
I think the Fall Maiden powers are the first Maiden powers to have been stolen. The fairy tale did imply that the Fall Maiden was the 'leader' of the Maidens (if only by virtue of being the oldest sister). It may have been the most significant one - in Cinder's eyes - to target first, or perhaps the Fall Maiden was simply the easiest one to track down.
As much as the theory that the mysterious farm boy being a time-distorted Ozpin does fascinate me (and it fascinates me a lot; I really do like the theory), I'm still thinking that the farm boy is actually a girl in disguise and is either the Spring Maiden or Something Else — in other words, the farm boy is basically Princess Ozma from the Wizard of Oz books. The symbol associated with the farm boy was a crown - on the equipment he was using, there was a crown with the letters EH.
That's Princess Ozma - girl-disguised-as-boy because of Wizard of Oz's actions - to me. Someone Ozpin is responsible for ending up in that position, but not Ozpin himself.

There's nothing to really show the powers are different from one another, and the notion that each gets one "element" has already been debunked with Amber and the World of Remnant about this.
Plus, Cinder herself only started showing the Maiden's glow after stealing some of Amber's power.

Any other problems you have with thing, it's perfectly reasonable for Sun to misunderstand Blake's reasons for leaving like he did.
And it really does seem like the Grimm beetle/parasite is the source of Cinder's pain.

I noticed that there's a black bird flying around in the beginning part of the opening with RNJR, and when it flies by Qrow he reacts to it in concern. I'm thinking that wasn't a Crow, but a Raven. And if we're going by the theory that one of those blank chairs at Salem's table is for Raven...

Or she just likes burning everything.
