The heroes do. Or well, are supposed to, but they were training to be hunters/huntresses who's job description is to go out and kill Grimm for the average Joe, even if they die in the process.
One of the parts of Cinder's plan was to turn to civilians against the hunters, so a big part of the next few volumes will be which of the heroes are still willing to risk death for average Joe when the rockstar admiration they had of hunters is gone and they don't like them very much. I suspect a few of them won't be.
And this is supposed to make the Grimm seem threatening to the viewers because...?
Really, the most threatening person in this show right now is either the All Mighty Edgelord Adam or "Shot Through the Heart and She's to Blame" Cinder.

I mean, ''unless it was brought up in a podcast/after show I didn't watch, that shot was really bizarre. To me, that could've gone both ways. They already showed Blake's wound and Yang's, so I can't imagine why showing the blood from Yang's severed arm (especially after they warned that the show would be getting dark) would require a Gory Discretion Shot or that pasta blood Yang had.
It could've just been for stylistic purposes, but I'd find it a little unnerving if every time blood was shown, it was the color of the character that spilled it. And it's not really going to help Ruby since her color is red anyway - unless she never gets seriously wounded at all over the course of the series.
I'd like to think that the yellow blood is supposed to mean something in regards to a person's aura.

It's a PG rated show (regardless of their intended audience) and they keep blood to a minimum. The shot was stylized so Yang wasn't gushing blood from her stump like a geyser. However Adam flicks some blood off his sword, and she's later shown bleeding pretty bad once they got bandages on it.

It's not actually rated on account of not being a Network production or run thorough the MPAA.
But yeah, the theme they're going for is shonen anime in Japan, Star Wars and Harry Potter eqsue, PG little dark and violent but nothing too extreme for all but maybe very young children. No excessive blood cursing, sexual content or anything like that.
People always want to turn the tone of series they like to the exact opposite.
It's easier to write stuff like that if you don't think you can be faithful enough.
