If my post doesn't mention a giant flying sperm whale with oversized teeth and lionfish fins for flippers, it just isn't worth reading.
My guess is that the speed at which Jaune starts being able to take out Ursa, even when completely untrained, isn't a case of 'even Jaune can...', it's a sign of his untapped potential (especially given that Pyrrha observed he had an awful lot of Aura when she first unlocked it for him).
That's not me disagreeing that the Grimm in the early stages of the show were of limited threat because I agree that they were. I just never quite understood why that bothered people so much. We were always going to be introduced to mook-level threats that partially trained kids can take out (or initially struggle to take out) because that's how stories grow - the heroes, especially if they're starting as kids, have to learn how to grow into the part, and the threat levels develop accordingly. They're always pathetic to begin with and get more dangerous as the story unfolds until eventually the heroes are playing catch-up. Then the heroes catch-up, the climax happens and the story ends.

Fighting a few Grimm is not a problem, fighting a lot of Grimm is a huge problem. These are basic zombie movie traits. The Grimm only need to be as much a threat as they keep humanity on its toes by attacking humans with the slightest negative thought. They probably are going to be a larger threat if the cast spend most of their time outside of any major kingdoms.

The Grimm are generic shadow monsters... Heartless, basically. They're perfect mooks. I'd say the White Fang should be elite mooks considering they're, well, terrorists that terrorize a society that raises superhuman children to fight its battles.

We should take into account that most Grimm the cast has fought so far is from just outside the outskirts of Vale and therefore dumb kids with no semblance - heh - of tactics whatsoever.
As the Vol. 4 trailer demonstrated they grow not only stronger and faster, but also smarter. Rillagrimm gives Ruby quite a bit of trouble, compared to... well, any other Grimm so far.
They went to a city that had fallen to Grimm in Volume 2 and had no real trouble.

Show tries to be World of Badass, but without giving a good demonstration of how potentially the primary opponents are in comparison. It is like The Worf Effect without showing how good Worf would be otherwise.

Beowulves and Ursas most certainly won't be a threat and will be relegated to RWBY's Putties, though it's been shown that they can evolve beyond into various stronger forms (i.e Alpha Beowulf Ironwood fought).

If you want the monsters to seem threatening, make them at least somewhat of a threat even to those who fight them, at least when they aren't fully trained adults. The giant Nevermore and Deathstalker seemed legitimately threatening until Coco and her team obliterated a few of them with little effort, and that was where a lot of the hype for Grimm fell away as they just never measured up. I'm hoping the justification will simply be that the Grimm farther from the cities are weaker, and the Grimm team RNJR encounters in transit prove legitimately threatening.
