I don't think weapon choices reflect their personality. Or at least not intentionally. Ruby and Weiss for example picked out their weapons simply because people they looked up to (Qrow/Winter) used them. Jaune's weapon is just his grandfather's sword that he took because it was all they had. Ren's weapon clash with his combat style horribly, to the point where he usually doesn't use them. Etc.
Nothing wrong with you having that theory, but I'm going to disagree with it.
The show hasn't claimed that's why Ruby and Weiss favour their weapons; it's clear both girls use their weapons differently to their mentor figures. Ruby's weapon is a different scythe combination to Qrow's, and they use them in different ways. Weiss's fighting style is also different to Winter's, even though they both have glyphs and swords.
Jaune is bad example to use of anything. He doesn't have a combat education prior to Beacon. He didn't even know what Aura was or that Signal students make their own weapons. We don't know anything about his family background, and we definitely don't know whether or not his sword and shield can do anything special. What we do know is that Jaune comes from a warrior heritage but has, for some reason, been kept well away from a warrior's upbringing. He barely knows who he is right now - but Pyrrha and Ruby seem to think his instinct is for leadership (which tends to be strongly associated with magical swords in fairy tales and even historical legends).
If you want speculation though,my bet is that Jaune's family has some kind of hereditary Semblance and that the sword and shield are linked to that hereditary Semblance.
I don't recall seeing anything that indicates Ren's weapons clash with his combat style, doesn't he use those weapons in every fight he's been in? He does, however, barely fight at all compared to the others. Out of the top eight characters, he's the one most relegated to background character.

Hail HydraThe Vol 3 commantary that just came out said flat out Weiss uses a rapier because Winter uses one and she idolizes her, albeit using much more dust because she's not as powerful with her family's semblance. And I could have sworn they said somewhere that Ruby uses a scythe because Qrow used one and she looked up to him and thought it was cool. And if you notice in the brief time Ruby uses Penny's sword she takes an identical stance to Qrow which suggests he taught her his entire style, sword and all she just chooses not to use a sword mode.
Good point with Jaune, but as for Ren, he's clearly more effective with martial arts than he is with his blade guns (he took out the Taijitu hand to hand, and during most of his fight scenes since he's usually only blocking with the blades and relying on kicks for damage), making one wonder just why he had them as weapons vs something like Yang's.
I don't own the DVDs, so I didn't know they'd confirmed Weiss, so I'll grant you that. Unfortunately, I can't own them unless they bring them out in Region 2 format.

Never mind, wrong character.
There's probably more to those weapons than we've seen. They look like they could be used for throat or tendon slitting as well as stabbing.
It would be cool if we haven't seen Ren's full range because he can be ruthless and they had to wait for the show to get a bit darker before showcasing it.

He wants to be a hero, and heroes often use swords and shields. Plus: Ancestral Weapons are also a pretty big thing when it comes to heroic fantasy
