Uni catMr Schnee looks pretty old to have a 17 year old daughter so it's possible he had Weiss later in life than usual (possibly after Winter started rebelling). My sister and I are only 5 years apart, and that's the norm for most people I know, but I do have friends who's siblings are about 10 and even 20 years older than them.
So Winter could be in her 30s. It's not impossible. Most of the adult characters in RWBY look very good for their age (which makes sense since the majority of them are in flawless shape and lead active lifestyles) with only the shopkeeper and Port actually looking old.
And more important: animation make a hell for you
Also I have 3 brother(Im the younger of he bunch) and me and my brother have 7 years of diference, so I posible for mr schee to have Weiss latter in life, into a life of more luxury
About Winter, I picture at 25, 27 a most, with many years with Ironwood , also is clear Winter and Qrow know each other and is not the first time both of them have this argument....

Ironwood, Glynda and Qrow seem to form a peer group, so they're probably similar ages. My head canon is that they're all 40+. Papa Schnee actually has a couple of age lines on his face (identical to the old wizard's), so I'm tossing him into the 60+ category. He has a bit of a military aura, so I wouldn't be surprised if he lived through the great war (so may be even 80+) but my head canon is that people on Remnant have longer life spans than real life (I'm ignoring Ozpin).
Anyway, I easily place Winter at around 30-ish. I don't think she's as old as Qrow, but I bet her age is closer to Qrow's than Weiss's. My head canon is that she was a teenager when Weiss was born, so is at least 13 years older and probably older than that.
On the subject of BST, I can just imagine the Snowbird fanfics: the "plots" will all consist of argument, then fight, then angry sex, then bad Spuffy quotes afterwards. Bleach, please!

Shadowy, illegal stuff rather than organised, legal military training.
I can imagine Papa Schnee being one of the minds behind a militarised academy. Then again, I can see Salem as one of the minds behind a militarised Atlas academy if it fits with her long-term plan to divide humanity (which it does).
On the 5-8 years old estimate. Winter really doesn't seem to view Weiss as a sister; she treats her more like a daughter. I just get the vibe that Weiss has only ever known Winter as an adult figure or a near-adult figure, hence the hero worship.

I'm actually automatically assuming that Papa Schnee was born with white hair. That's why I'm focussed more on his (very few) facial lines and military aura. I've dismissed his hair colour entirely.
I really would like to see how glyphs and summoning would work for him in battle. It's often depicted as a girly or effeminate male sort of thing in stories (something I think leaves the potential very underused). Papa Schnee doesn't have a girly look about him. He's got a Von Trapp look about him. I'd like to see a male character working with glyphs in this show just to see how it's depicted.
I think that's my brainwave - I've been imagining the Schnee family in a very Von Trapp way.

But even then, that put him at 30 something, Winter on the other hand looks like 26, she also look like harsher version of Weiss(perfectionist, strict but caring in her own way)
"My Name is Bolt, Bolt Crank and I dont care if you believe or not"@Wyldchyld: It's hard to say how much cronyism goes on with SDC, but given the rather unflattering description of Atlas's government, I'd say it ranges from "a lot" to "it's basically an actual component of the state" along the lines of the East India Company, or one of the Soviet-era state run conglomerates depending on where the implied military oligarchy falls on the political spectrum.
So the conflict probably hasn't just been between private security and the White Fang, the actual government of Atlas, or at least its resources are almost certainly involved.

When I wrote that I was actually thinking along the lines of 24 which is one show that depicts just how far someone can take the concept of "private security". So, that puts your thoughts and mine closer than you probably think. My point, though, was that the situation probably wouldn't be based on an open, structured official military with legally sanctioned tactics. It's likely to be far more sordid and secretive than that.

Also, Arkos romantic arsc weren that welcome since it use a lot of anime cliche(the ace who feel lonly for being so go, the obvious guy that she liked because he is kind and a romantic triangle that get nowhere.....yeah) it get better in volumne 3 because Jaune become the suporting chararter to Phyrra.
And for the rest are just tease(like Ruby and Weiss) and strong posibilities(After the whole Adam thing....)
