They have the overview of the entire story from Monty (apparently he also had ideas for the kids hitting adulthood if people wanted the story to keep going). The reason they're not certain about the amount of volumes is because it completely depends on how Miles and Kerry structure each season. That's what dictates how much appears in a volume, and that'll dictate how many volumes they ultimately have.
The key message is that Monty left the entire plot, but the number of volumes we end up with will depend entirely on how Miles and Kerry script each volume.
Either way, we'll get the whole story, and it sounds like it'll be far longer than just five volumes.

...I mean, both are Asian men who passed away in their early 30s (Monty 33, Bruce 32) because of a medicinal drug they took. Both kicked asses in their own ways, too.
Both are also fucking legends who are gone too damn soon.
Just my opinion, though.

Do they get someone else to name it? Do they consult a great big book of recorded Semblances to see if theirs is in there?

So the whole silver eyes thing makes me wonder; does everyone with that eye color potentially have extra-superpowers, or just some of them, and how rare is the trait compared to real life, where it's about 0.5% of the human population, making it the most common of the "uncommon" eye colors.
