The livestream just confirmed there are "years worth of story left to tell". To quote.
They have the overview of the entire story from Monty (apparently he also had ideas for the kids hitting adulthood if people wanted the story to keep going). The reason they're not certain about the amount of volumes is because it completely depends on how Miles and Kerry structure each season. That's what dictates how much appears in a volume, and that'll dictate how many volumes they ultimately have.

The team commented on the manga. They consult on it, but not to the point of stifling the creative freedom of the manga artists. They to try to make sure nothing contradicts canon.

What happened to Penny was decided before Volume 1 ever aired. It was called the "Penny moment".
Torchwick was never meant to be such a big character, but the fans loved the character and the team loved the voice actor, so his role got bigger.
The voice actor they doubted the most when approaching audition was Lindsey (for Ruby). Her natural voice is so low they were really surprised by how high they could make it.
And Team JNPR and Shannon Mac Cormick have just joined the livestream.

The animation team really struggled with Pyrrha's walk through the vault with the teachers. They were trying so hard to get the footstep sounds perfect.
Oh, and for people asking the question.... no they don't know quite where Ironwood's metal leg ends and the... er... human part begins.

I have to wonder how far they're going to go as far as the planned tone shift. Is it going to reach Attack On Titan "everyone who is not a named character is doomed and the world sucks", Game Of Thrones "everyone who is sympathetic is doomed and the world sucks", or Puella Magi Madoka Magica "Look at this cute Magical Girl series, look again and everyones dying and/or going insane and the world is ending and everything is horrible."

@Character Death: Ozpin is the only one who's in a position where death is possible from a narrative standpoint, the main characters (RWBY and JNPR) are safe.
Narratively, it's too early. Him being disgraced seems about right for what's going on right now. I'll be surprised if we see anything significant from him and Cinder (in terms of full-blown fighting) next episode.

That's true for RWBY barring Yang going the way of Kamina, but JNPR is fair game since they don't have title billing, and given their relative importance, is probably the most likely source for a Sacrificial Lion at this point in the narrative, unless Ozpin's dirty secrets are going to come out post posthumously.

@Captain Not very good examples tho.
Penny is a robot. She can clearly come back but the thing if we don't know if she will be the same.
Roman is a bad guy and he supposedly wasn't going to have a big impact.
But i will say that i'm pissed at how roman went down. (I secretly theorize he isn't dead for good but that's my headcanon anyway)
