Except Ghost Rider glaring Galactus into submission isn't nearly as badass or hilarious as Squirrel Girl doing the same.

Nuh-uh! I'd be OK with Squirrel Girl defeating Galactus off-panel, because it fits her character. She beats everyone off-panel. So it'd be acceptable.

Well, sure. Because Jack Kirby is God.
Though I have to say, god really lost his touch in '70s. And god should never have been anywhere near a typewriter. The books he wrote and drew (and edited) were among the worst comics I have ever read. The art was terrible, worse than his '60s work. And the writing was just . . . no. Jack Kirby was a worse writer than Chuck Austen. Yeah.
X-Men X-Pert, my blog where I talk about X-Men comics.There's a few Thor baddies that could probably give Galactus a run for his money- Surtur, for example, and maybe Hela. I'd give Loki a fighting chance as well, for that matter, assuming that it was via scheming rather than a straight-up fight.
Oh, and oddly enough, Word of God has it that the Hulk at maximum rage-levels would be a match for Galactus.
The Phoenix (Rachel Summers version) actually has thrown down with Galactus, and it came to a planet-wrecking stalemate, at least until Galactus broke her tiny mind by telling her that she was drawing power from lives yet unborn, rather than lives that have already happened like he does, so the whole 'moral high ground' thing wasn't working so well for her...
I can actually buy Sorceror Supreme Doc Strange taking Galactus- his whole schtick at that time period was safeguarding Earth from guys that eat dimensions, so a planet-eater isn't much of a stretch. Galactus has also been shown on numerous occasions to have some lingering shreds of humanity (or whatever you want to call it), so the Penance Stare working isn't as much of a stretch as it might seem.
Lesse, others... Michael Korvac might have had a shot, I can see D'spayre tangling with him assuming that he was well fed, the elders of the universe (I think that's what they're called, anyhow- like the Grandmaster and those putzes) might be able to pull it off if they worked together... Cyclops, oddly enough, might have a shot, if he had an external power source, since he's been shown on a few occasions to be able to channel functionally infinite power levels (most memorably when he channeled the power of every mutant on Earth to drive away the Z'nox and when Phoenix channeled the power of an entire planet full of mutants, along with the Phoenix Force, through him to blow off the hand of the Celestial Judge). Fin Fang Foom wouldn't likely be a true match for Galactus, but it would nevertheless be a fun fight to watch
Odin is weaker than Thor...in Norse Mythology. Marvel on the other hand reverses that relationship...to absolutely horrifying levels. Marvel Thor is mostly accurate to his mythological counterpart, not in behavior, appearance or specific abilities but he is pretty accurate as far as feats and power levelss go. Odin is just something else entirely.
Though Thor at one point did inherit Odin's power and surpass him we all know the real god of the marvel universe would not let that last.

Plenty of people are concerned about Galactus's existence, but not many of them have the power to actually do anything about it. It's funny you should mention the Skrulls, since they're especially concerned about his existence after he ate their homeworld. One of the mightiest empires in the universe couldn't stop Galactus from devouring the most important planet in their systems. What's S.W.O.R.D. going to do? Build a big ray gun?

In Marvel Cosmology Odin is the most powerful of them but has to sleep a lot because of it. (The Demiurge, Elder gods, Many Angled Ones and Elion/Tetragrammaton/YHWH are removed from main pantheon hierarchies by the way)
Marvel Zeus is pretty tough though, he has beaten Thor, Hulk and Thanos with little effort. (In actual mythology he probably should probably be equal to Thor or Tyr since they derivative from the same Indo-European figure with Nix or Athena as the strongest one but whatever, Marvel does Classical mythology better than it does Norse. Guys like Socrates, Homer and Plato had no problem portraying Zeus as fallible but Chrysippus insisted Zeus was all powerful and perfect, Chrysippus's Zeus would kick Galactus's ass, the more popular version would not)
