Someone on reddit speculated they did that, because the point is that she now starting to be on a path to recovery from what PD did to her and not healing her eye so showing the eye healed or still broken would distract from that.
Personally i was not too invested in the new episodes but thats because i wasnt really intrested in them to begin with.
The only things left of interest for me is will solving the pink white diamond issue reveal the origins of gemkind and how will the pink demon a.k.a. wormi boy come to be. (i think thats really steven after a emotional break down)
The show very deliberately obscured Volleyball's face for the aforementioned issue of it distracting from the point.
Literally speaking, Mega Pearl still had the scar up to the instant she defused. Even if the scar heals significantly by the next time we see her, it almost certainly hadn't at that instant.
At a post-movie screening Q&A, Sugar actually outright said she wasn't, but White Diamond was involved with making all Pearls, and to wait and see how things continue.
The Reef probably figures into this, as it's possible Pearls aren't made the same way other gems are.

An interesting post on reddit
points out that part of Volleyball's crack is seen from the side earlier in the episode, but is absent in the ending. Could be just as much as a hint as could be an animation error.
I like Maya Petersen's idea to shorten it to "Volley".
As far as things Pink Diamond did by accident, even the early stages of colonization probably killed thousands of people. So to me all this revelation does it bridge the gap between the scenes on the jungle moon and Pearl's first memory of her.
