I did have one kinda off-the-wall theory about Steven's next fusion - he's going to fuse with Ruby next - she's going to process and get over the news about Rose being PD much faster, and she's going to fuse with Steven in part to show this and in part to look for Sapphire more readily. It's a very low probability chance of happening (honestly, I think Steven/Pearl is most likely), but it was an interesting idea, I thought.

I kind of had the theory about Steven fusing with either Ruby or Sapphire by themselves too, mostly because it would be an interesting direction for two characters who almost by definition aren't usually in the show. Not completely down with it, but I could see it happen.
As for which of the Crystal Gems I'd want more episodes about, even though she gets a lot of them I'd still say Garnet, simply because while Pearl and Amethyst have had who they are rather fully fleshed out, there are noticeable parts of Garnet that we haven't seen even though we have seen them often from other characters.
She is, for example, the only character (at least, who knew her) to date who hasn't had an episode about her specific, individual reaction to Rose's death and how she feels about the way things are different now, of which Amethyst and especially Pearl have had several, even though from what we see of flashbacks her place in the team dynamics significantly changed pre-to-post Rose's death. In fact, while she does a lot of talking about the past and her ideologies, the only episodes that really explore her personal feelings in the present are the ones about her Future Vision. Even the Sardonyx story was arguably more about Pearl than it was about her.

Of course, aurochs never lived on the Northeastern Seaboard, so either wildlife placement is really different, or Garnet was just talking about stray/feral cows.

Sure, if you go by the theory that Steven Universe mostly takes place in the equivalent of Delaware, that's notable because it's much further east than bison are found usually, but eh, far from the most radical difference between its world and ours.
