I'll note that only 17 episodes have premiered since April 2017—which is the same number of episode that premiered in the 12 months before the Summer of Steven began.
A production hiatus (i.e. empty studio) is even less likely because they'd have to replace huge amounts of the staff who , which translates into a huge efficiency loss.
For the Italian version having a Never Say "Die" change in a song... well, was it just that they changed the lyrics a bit to make a Woolseyism? I mean, if the choice would be between keeping the word "die" with bad rhyme/meter or only implying death while having a good rhyme/meter, as a translator, I'd pick the latter. Music can be a pain in the ass to translate because the structure is inherently more restrictive than spoken dialogue.
As for my favorite song... well, I'm a sucker for a good old-fashioned Torch Song, so "It's Over, Isn't It?" is right in my wheelhouse.
As for why with the hiatuses... I thought the consensus explanation was "Cartoon Network screws around with anything that isn't Teen Titans Go."

Berserk is a famous manga known for having either long and/or frequent hiatuses, so it's sort of a joke to refer to other things as being "worse than Berserk", as an exaggaration - usually. The boat refers to how the characters previously journeyed on a boat to reach a destination which, while presumably a few months in-universe, took eight years in real life for them to get there.

I'm almost entirely certain that PD has plant powers like Rose does, as her stuff often has a flower motif.

- The Crewniverse knows about the "In episode one Steven thinks he gets his powers from eating ice cream. In episode 100...." meme. Ian argues that "Gem Glow" is actually darker than the meme gives it credit for because it's really about Steven being worried that he isn't good enough as a person without powers.
- "Steven and the Stevens" is the episode where Steven realizes that he was being an "annoying tag-along" in all the previous episodes, and is a turning point for his character.
- As a joke, the crewniverse wanted to to have one of the many Stevens at the end of "Steven and the Stevens" look like Steven from the pilot, and included it in the story boards, but the Korean animation studio that made "Steven and the Stevens" isn't the same one that worked on the pilot, so they just drew him to look like the rest of the Stevens.

(They don't say this, but I get the impression this means that "Cheeseburger Backpack" wasn't written as a test, but the Crewniverse decided it felt like one once they saw the finished episode.)
- Since "The Test," Steven's bright, happy-go-lucky personality has partially been a facade to keep the crystal gems from worrying about him. "Steven's Dream" is where the cracks in that facade start to show.
- Zach says singing songs in his Steven voice his the hardest part of the job for him, and it's been nice to have a break from that.
- Connie not returning Steven's calls and texts is a deliberate role reversal from "Full Disclosure."

Huh... for the matter of Pink Diamond's powers... do we even have a grasp of what powers Blue and Yellow Diamond have? Other than Super-Strength for Yellow (she did poof Yellow Zircon with literally just one finger), I don't think we have any full reckoning of just what they could do. The closest we have is the suggestion that the Diamonds are somehow directly responsible for The Corruption afflicting gems on Earth, and even that might just be metaphorical.

My guess is that, in addition to the empath thing, Blue Diamond has a more powerful natural version of Aquamarine's wand.
I have it in my headcanon that the Homeworld Gems' more powerful weapons are knockoffs of the Diamonds' natural powers. For example, the Gem Disruptors are based on Yellow Diamond's lightning which can instantly poof a Gem.
