Padparadscha looked too much like a reskinned Sapphire to look original.
Padparadscha is a Sapphire.

Rhodonite looked a little too similar to Garnet, despite half of them being a completely different Gem.
I felt similarly, specifically that her outfits makes her look too much like Garnet's initial form. I like the hair, though.

Personality-wise, I had no problem with them. I thought they were great. It's just (some of) their designs that I didn't particularly like.

Is the Padparadscha rock a type of Sapphire? Was the person we saw supposed to be a Sapphire, but got called a different name because she's defective? Or is a Padparadscha just slightly different from a Sapphire?

Is the Padparadscha rock a type of Sapphire?
In a generic sense, padparadscha is color. In this specific context, it's a sapphire that happens to be that color.

Was the person we saw supposed to be a Sapphire, but got called a different name because she's defective? Or is a Padparadscha just slightly different from a Sapphire?
It is not clear if her defective future vision is shared by other Padparadscha, or if the defect is specific to this individual Sapphire that happens to be a Padparadscha. It's similar to Carnelian's height: since we only saw one of them, we don't know if Carnelians are a short type of a gem or if she's a Carnelian that happened to be short.

From a narrative standpoint, am I really the only person who feels it'd be a massive cop-out to have Rose be innocent, let alone have Yellow Diamond be the culprit? It feels like an idea from a Fix Fic from someone who just can't stand the idea of moral complexity and the idea of the good guy doing something unheroic at any point. Better to just pin everything bad on the obvious villain and strip away what complexity had been hinted at in her character, because a villain with complexity is confusing. Not to mention it'd turn the entire arc of Rose's less admirable traits being brought to light and Steven coming to terms with them into a massive plot cul-de-sac.

It'd just be a reveal way bellow the calibre of this show's writing.

This has been addressed like a dozen times in the last 24 hours. You are far from the only one here to express a problem with the idea, or even specifically say it would be a "copout/cheat".

Speaking of which, is she constantly using her "future" vision because she can't turn it off, or is she just so spacey that it distracts her from the present?

I think it might actually be a form of Postcognition. Like, she might be able to use it to see things that already happened while she wasn't around.

The spatial ability of future vision sort of confuse me. Most of the time, Garnet/Sapphire only see things from their perspective, but in the future. Other times you have things like "Gem Hunt", where Garnet somehow foresaw two corrupted gems rampaging around maybe-Canada without actually going there.

Regarding the possibility of Yellow Diamond (or White Diamond) being the one true villain and Rose being revealed to had not killed Pink, I don't see as likely bar this show suffering Seasonal Rot. feelings of it being a cop-out otherwise. There are still some details missing, and Zircon's statements are questionable until the point where we can see Pink's demise. It just feels a little too...convenient for such a twist.

BTW is 5 supposed to be the last season?

[up][up] But how can you know she didn't have a vision where she went there and found the corrupted gems?

I think I mentioned it already, but if her range could be expanded, Padparadscha's "present vision" could actually be very useful. You could get some advance warning if more robonoids have been dispatched your way, for example.
