Check out my art if you notice.For the topic of why they would even bother with Choosening if they were to plan on external mating in the first place... well, if you're going that route, why bother Choosening instead of doing a Free-Love Future? You're just as likely to continue generations that way, and given that the zoomans are a family unit basically anyhow, it's not like that will result in abandoned children anymore than the actual arrangement.
Honestly, if you think of it, it's kind of strange that a civilization like that of the gems would encourage any sort of romantic pair bonding at all, regardless of whether they let zoomans reproduce naturally or not.

Forever liveblogging the AvengersWell, a dystopian Free-Love Future (certainly what the gems would have built - nobody's under any utopian illusions here) eliminates the concept of rejection on a societal level - you wouldn't have to worry about rejection because nobody would even think to reject anyone else. And it's not like the gems didn't have time or the inclination to socially engineer the zoomans that much - it's clear that they already have.
Regardless of the actual method chosen for reproduction, though, I suspect that the computer responsible for Choosening was deliberately trying to match up people for reproduction to minimize genetic defects and/or bottlenecks. If so, that means that Greg's selection in Choosening was inevitable - he was a fresh influx of genetic material, and thus necessary for the zoo's operation. If that sounds disturbing... well, yeah, that's the point.

They have the giant hand's wreckage in Amethyst's room IIRC. So I think they could maybe get Peridot and Pearl to build their own ship with that?

Pearl and Peridot have no problem building things. The show makes it a point that their "roles" don't really matter all that much. Pretty sure Bismuth acknowledges that too.
The other thing is if there were a warp to the zoo wouldn't they have just figured out how to use that in the first place?

Only if were actively searching for one,since they already had the ruby ship they had no reason to
edit:but yeah roles don't necessarily matter,and those two gems can build stuff because we've seen it them build fighting robots before,but making a spacecraft from the handship's wreckage would be tall order even for them
