OK, I'm like... nine months late on this, but there's something about "Steven's Birthday" that I feel was never adequately discussed.
Basically the entire conflict of the episode was a Pseudo-Crisis based on no one remembering the events of "So Many Birthdays". It showed Steven's mental state affects his physical age (and actually changes it, not just a "fake" change like Steven growing taller), which was still demonstrated to be true when Steven turned into a baby. Given how quickly Steven brought his age back to normal and has gotten a hang of his other power, it seems inevitable that he'd be able to semi-permanently change age at will, but no one even suggests such a thing.
He ended up regressing because he stayed stretched too long...that's what Amethyst said in the episode.
They were treating it as a different issue..because it was. The energy strain is what caused the regression.

I have to say, an episode starring Steven, Pearl, Sapphire, and Lars sounds amazing.
