So far, we've had Greg first meeting Rose, Greg learning about fusion and getting to know Rose more, and how Garnet's halves met. There have also been flashback moments, like Rose's tape to Steven, Pearl's projected memory of Rose, and Pearl's rebellion history when training Connie.
Eventually, I'm expecting them to have episodes with Pearl's and Amethyst's origin stories. I'm interested in seeing what Amethyst did by herself for centuries (or millenia) before the others found her. But as for what I'd want to see, I would really want to see the real founding of Beach City, and how the Gems were involved. Or maybe an episode about that big battle in the field that's now full of strawberries. Or even an episode of Rose's last day, and what she said to Greg, and how heartbreaking it was.

And I don't know about seeing the origin of Beach City for real. I'm pretty sure the play was pretty much a creative way to tell Pearl's rendition of the town's founding story in-place of a flashback. Probably had all the important things there is to know.
