They adjust their body's mass to match the gravity of the current place, they do not adjust gravity, because that idea is stupid and would require even more divergence from reality. Presumably, Lapis reduces her mass to "literally just a rock" and uses the wings to fly as if the rock was a bird

Mass change isn't a conscious mental decision, brah.
It ain't a mass change. As Peridot noted in Great its a gravity adjustment. Adding on more mass on the Moon would have given Amethyst "hang time" in her jump, when instead she fell at the same rate she was used to on her birth world. She reflexively increased her rate of descent so didn't have to adjust her combat timings.
They're not likely to leave the ship unless there are already Gems on the Sega Neptune.
