I think we've had this same discussion here before, and someone mentioned that it was because, especially as Gravity Falls came closer to ending, there became less to speculate on. There were really only a few central mysteries to toss around hypotheses about, unlike with Steven Universe, where we have a whole society to speculate about, monsters, history of the Gem war, characters' backstories, Pink Diamond, how Gems even came about in the first place, etc. Also, GF's mythology tends to be a lot more like spoofs of mythological creatures we typically hear about, so it's harder to speculate about them, because a lot of it can be attributed to Rule of Funny.
When we're done, there won't be anything left.1. Yes, that was an explanation of why this thread is shorter, not a dig against SU. I'm not a huge fan of Steven Universe (I watched the first fifty or so episodes and it just didn't click, so I haven't really kept up), but I've got nothing against the show.
2. The fact that GF's plot is now complete doesn't help either. Before, speculation ran rampant because the show was clearly dropping hints leading up to something and figuring out what was part of the fun. Thing is, now that we know how things played out, that sort of speculation can't really happen. We can make guesses about stuff like where Dipper and Mabel will be in the future, but it's not really the same sort of thing.
Reaction Image RepositoryGideon. The whole Idea of riffing on the tent pscyhic/preacher types was absolutely genius and something I entirely did not expect to show up in a kids show. Bill Cipher for the obvious reasons everyone has stated too. Gruncle Stan was really fun too and his whole sleazebag with a heart of gold persona worked incredibly well.
There are a lot of moments that are really good for representing Stan's character but I think "The Last Mabelcorn" summarized him flawlessly in one scene.
"MONEEEEEEEEY!!!!!"
My Tumblr. Currently side-by-side liveblogging Digimon Adventure, sub vs dub.Stan is probably my favorite character, probably because he hits just the right balance of jerkass grouchiness and and genuine care for his family. He's also a lot more complex than he appears at first, which is always great.
Reaction Image Repository"We could always argue about Mabel again. "
- break wall* I READ SOMEONE WANT TO ARGUE ABOUT MABEL SOME I CAME AS FAST AS I CAN....
No? you dont want it? damn it!
Anyway, of the good guys my favorit is Dipper, I like how wreck he is, I dunno like his crush on wendy(or her for that matter) after knowing he wont be with her, it go old, FAST
on the villian...well, I like Bill for his mood swings between charming and terryfing(as Tobias said, this is closet will have to lovecraftian story) and candy monster at first, it was the closet thing to slenderman and jeez, that was awsome
"My Name is Bolt, Bolt Crank and I dont care if you believe or not"To elaborate on why I like Gideon so much is that I kind of have a weird fascination with the absurd preacher types like Pat Robertson and other televangelists. Something is so interesting to me about how they put on an absolutely happy face but be incredibly corrupt behind the scenes. Gideon captures that essence perfectly.
One thing I like about the show is that it gave happy endings to all its human antagonists. Even though they were awful people Robbie, Gideon, and Pacificia all were in some way likable and letting all of them turn over a new leaf was something I really loved. Thats something I really like about 2010 cartoons that was missing for much of 2000s cartoons a true sense of humanity among the characters.

It had fewer pages before it ended...even though it started 2 years earlier.
