What you just saw Dio DIO using was the Stand that would've likely awakened within Jonathan's body (which may or may not be Hermit Purple like Joseph's Stand). Y'know, were he not dead.

the theory goes that DIO has just one Stand; The World. And it has the abilities to awaken Stands in people from his bloodline, and to copy the form and power of any one of those Stands at a time. Which would explain why his presence now is causing the Joestars to manifest Stands, and how he can have multiple powers like this. Which would mean that he's copying Star Platinum at its full potential instead of them just being coincidentally similar.

I believe so yes.
This is actually very important as it was Kaneki's rampant cannibalism that allowed him to gain the Centipede. That's how you get a Kakuja, a Ghoul has to eat a shit ton of Ghouls which was repeatedly stated several times in the manga & contributed to his mental breakdown when he finally gained the Centipede.
So yeah that's a problem with this adaptation in that it got rid of some pretty important stuff.
She wanted him to stay a pretty little girl forever so she literally tore off his access to testosterone.
