As creepy as Hisoka is, it's immensely satisfying that Hisoka is playing the Spiders for fools.

Kaneki's torture is anything but gratuitous. It's the catalyst for his tragic transformation into a badass, which, unlike a Shonen series, is not played for awesomeness. His transformation is supposed to be really sad and depressing for the fact that his life has been completely, utterly ruined by the same circumstances that make him so powerful. He doesn't make the transformation through hard work and determination, but through horrible suffering.
