I had always thought that Beerus wanted the Saiyans wiped out not because of the feast but because he knew they'd eventually pose a threat to the balance by destroying too much.
Okay, the feast may have been a part of it but I don't think it was the only part.

Plus he seemed totally surprised a saiyan could defeat Frieza and was of course very pumped up for the prospect of fighting the "Super Saiyan God".

When Beerus visited, that's probably true. However, it was noted that the Saiyans were getting stronger and stronger so it likely wouldn't have been too long before your average Saiyan could blow up a planet.
Beerus likes a good fight.
I wonder if the reason Battle of Gods is being changed in Super is a result of Demigra and the Time Patrol altering history.
Beerus and Whis try to go home after Demigra is defeated but Whis goes too far back, and they can't go to their temple because they're both already there.

The changes Xenoverse made to Battle of Gods are pretty great. Not only the whole pudding thing but also Beerus' ultimate "FUCK YOU" to Demigra.

So really, it makes no sense why he'd hang back, particularly considering he's so against letting the player fight Demigra later.

I mean, the fact that the Super Saiyan transformation is just too convenient. It makes them too powerful without enough drawbacks. I'd really like it if it turns out that breaks the laws of the universe, or something.
The *Legendary* Super Saiyan is motivated by a crying infant! He is a literal giant f***ing baby!Time Patrol doesn't alter history, just make alternate timelines have different futures, and that was just Trunks and Bulma. Time Breakers change history.(and I still don't rate Miira beyond SS2 Gohan as Cell couldn't hurt him either until his powerup, though I haven't played Xenoverse)
Anyway, when I mentioned time alterations a few pages back, I was thinking more along the lines of Whis type, since he was later revealed to be able to alter time and I've seen images of a Whis type that seemed to be official. I'm sure Demigra's appearance would make people happy though, the way I hear people talk about Xenoverse.

And the Time Patrol is meant to fix the changes of the Time Breakers.
...And, in Xenoverse, Beerus and Whis suddenly showed up at the Time Nest after Demigra's mirage was beaten in the Battle of Gods saga. With the implication that Beerus and Whis headed straight there, skipping the ending of Battle of Gods.
And Beerus and Whis are in the ending of Xenoverse, having apparently watched the whole thing.
So it seems like the Time Patrol sorta accidentally created a timeline and/or fucked up history.
From the perspective of Goku, he passed out in space when Beerus was about to destroy Earth, then when he woke up Beerus and Whis and the other person that showed up suddenly vanished.

The Time Nest is in Year 850. The events of Battle of Gods have already long since passed. Whis and Beerus being there doesn't mean that there was a significant change to the timeline, at least, no more significant than the change that already happened.
Time Travel cannot create new timelines. There's exactly one person who's ever managed to do that, and that's Bulma possibly with help from Dr. Briefs, and that shit is not going to happen again so long as the Supreme Kai of Time has any say on the matter.

You'd be pissed if someone screwed up things like Bulma did (by creating a Time-travel machine) and you had to fix it.

Beerus is petty, but he's also lazy. If you cross him either for real or in his mind, he'll destroy you and anything you have, but if something/someone somehow escapes, he's too unmotivated to give chase beyond the strictly necessary.
