So... what's the point of bringing Freeza for the tournament? In the end he didn't do anything interesting, he was just a good little teamate and kept his end of baragin. So it was all so they could ressurect him again? Seriously....

Well, now just to wait for the movie and the inevitable next series.
I thought Zen-oh would turn out to be more of an asshole, since they established that he's erased six universes before. Then when 17 missed his chance to quote Futurama ("...and as an environmentalist, I'm against that.") and revived the universes, GP and Zen-oh could just wipe them again, causing a crazy rebellion even Frieza would agree to.
So yeah, just happy to see that GP and Zen-oh were the good guys all along. Now we have Universes -1 through -6 for fridge horror.

I doubt it'll turn out he planned it all along considering the discussion they were having right at the start, but maybe it will turn out he changed his mind very quickly and just kept the tournament going anyway for fun.

Could only have been planned from the get-go. The gods only valued power for entertainment, but tricked the other gods into thinking it was all they cared about, and almost had enough of the mortals fooled.

Say one thing: it was unpredictable. I saw a ton of theories about how the Grand Priest and Zeno would react to bringing back the erased universes, but I never saw anyone think up this specific scenerio. Closest anyone got was theorizing that it was a Secret Test of Character done by the Grand Priest aimed at Zeno, no-one suspected that it could be one done by Zeno aimed at the other universes.
Zen-oh being the mastermind did catch me off guard. I figured it would be the Grand Priest. It doesn't help that Zen-Oh never says anything with weight directly. He always talks through the Grand Priest. Or the Grand Priest chooses to interpret Zen-Oh's will as he sees it. Or the Grand Priest is lying through his teeth.
It would be interesting if it turns out that Zen-Oh has been Obfuscating Stupidity this whole time and the Grand Priest is just his mouthpiece for serious matters. It does seem that in situations where the Grand Priest isn't around, like right after the U6 tournament or when Goku summons Future Zen-Oh to deal with Zamasu, Zen-Oh seems to display a certain degree of professionalism. Such as scolding Beerus and Champa for slaking off and deciding that Zamasu is endangering all of existence and must be destroyed.
With all the callbacks to past arcs, this would've been hilarious.
