We've literally had more of people preparing for fights and uncovering mysteries than the fights themselves. Heck, we haven't even really had much training. It's just "let's figure out what exactly is going on before we go and fight".
I still really like the fact that they got their ass kicked last episode. It was totally unexpected, but it really helps nail in the fact that if they go back, they seriously need more of a plan than just "get more Senzu".

As far as I am aware, none of the Buu forms have official names. In the manga, he is called Majin Buu no matter what form he's in. So, the grey Buu being called Evil Buu was never in the manga. So, it really isn't his name, just a title given to separate him. Like Fat Buu isn't actually called Fat Buu and Kid Buu isn't called that. The closest name for him in the manga is Pure Buu.

Vegeta already said that Goku and he were near their limit during the Champa Saga when they went to train for three years in the Hyperbolic Time Chamber. So even if they did train, they won't become much stronger. And that also wouldn't solved Zamasu being an immortal. I do wonder if Goku's plan could work since it was only shot down because there weren't enough Senzus. Not that it is impossible.
Goku agreed with Vegeta when he said it. And the last time Goku made a comment about reaching their limits was the Cell Games. Which he was proven right since Trunks and Vegeta didn't get much stronger after spending another year in the Hypobolic Time Chamber.

Provided what you said about reaching their limit is true (IIRC, in the Spanish version Goku said that it was unnecessary to go back in, not that it wouldn't give them any benefit), then it only supports Goku being wrong again.
Because Goku was incredibly wrong. There was not one but two transformations that he could unlock to further increase his power and there was still a whole lot of improvement he could've made to his base form.
The characters are not omniscient, they don't actually know the limits of Saiyans. Nobody knows how far Saiyans can go.

There's such an Orgy of Evidence against him that I can't help but feel there's still a curve ball left on what's really going down.

Pure evil means not having good at all. Super Buu had several good people within him, so by definition he can't be pure evil. We don't see enough of Buff Buu to know his personality, but even Buff Buu wouldn't fit the definition of pure evil.
The point is, Super Buu wanted to be evil and acted on it. He wasn't like Kid Buu who destroyed and killed for fun, and was nearly mindless, or like Fat Buu who was mostly misguided. Super Buu knew what he was doing was evil, had the conscious to know what he was doing was wrong, and still did it. He is no different than Frieza or Cell. Which is why he has a Complete Monster entry since 'pure evil' characters can't be put on that page.
