My favorite fight in the entire franchise is probably Goku vs Piccolo Jr at the Budokai, specifically the manga version. After that, it's Goku vs Krillin from the earlier Budokai (the one with Tien, iirc), specifically the anime version (imo, it's one of the most well choreographed and animated fights in the entire series).
So those are my pitch ins for best fights of the Dragonball era.
For Z, imo most of the best fights are actually of the Curb Stomp variety, but I'd add Goku vs Cell to the mix. You've also got to count Goku vs Freeza - the whole thing really, though my favorite part is the bit before Goku powers up and Freeza is showing off more than actually taking things seriously.
GT had the problem of taking all the acceptable bad stuff about DBZ's fights and ramping it up to eleven such that most of the fights were boring and forgettable. My favorite fight of that era is probably the fight at the end between Goku and Old Man Krillin - I'm only half joking.
Super... the big fight between the Z Fighters and Freeza's army definitely belongs on any list of great fights in the series. Both versions.

Young Carrot vs. Old Krill-fish was a good one too, especially when he stopped Carrot's heart for a brief second after defeating him.

I'm also gonna put in the first Goku vs Vegeta fight. Just good stuff all around.
Also, while a lot of people dislike due to the whole Goku and Vegeta could already take the entire army out, so why do these guys even bother? attitude, I also kinda like the army battle in Resurrection F. I'm not saying it's perfect, but it's cool to be reminded that the Z Warriors are all legitimately strong in their own right (not just be Earth standards, but by Galactic standards as well, considering how easily they take out Friezas soldiers).
Hell, even if I think it makes little sense to be there, seeing Roshi hold his own in that fight and do more than be a dumb pervert was cool as well. The guy was once the strongest man on the planet so seeing him back in action was nice.

Roshi was never the strongest man on the planet because Piccolo Daimaou, God, Korrin, Popo, and Taopaipai were all on the planet and all much older than him (except Tao who's implied to be about as old).

One Strip! One Strip!If we're going to dignify GT's fights, I'd say my favorite is Super Saiyan 4 Goku vs. Gold Oozaru Baby. They had some neat choreography like Goku grabbing his hand and and running across his belly to flip him over, kinda like what Ant-Man does to Black Widow in Civil War.
