We have no hints that the dangers he'll be facing fall into the very narrow range where Super Saiyan 2 would actually make a difference to his survivability.

Not counting the Oozarus, I can only think of Broly and Bojack for hulkish characters in Dragon Ball. And those two aren't even canon. Oh, and Android 13.

And even in Super, for some reason the characters seem skinnier than normal. Why does Krillin now look like a child, despite the fact that he's older now?

Oh, that. Nah, he wouldn't necessarily need Super Saiyan 2 for that but I do think he'd need to be stronger than he was at the Cell Games.
But there's not much reason for Babidi to show up in that timeline. Future Trunks' timeline is already way past the point where Babidi should have appeared, but he hasn't because there wasn't enough energy on Earth.
Nappa and Recoome are taller but have proportionally more extreme muscles than Trunks did. Noticeably so.

We've seen what his body looks like normally and with regular Super Saiyan. His Grade 3/Ultra/whatever form is a step beyond that, which is a step beyond Vegeta's form, which is a step beyond Super Saiyan. At least with Nappa and Recoome, we assume that's their natural state.
Maybe at that point Toriyama was thinking "there's only so much more buff I can make these guys without it seeming a little ridiculous". Even Super Saiyan 3 wasn't as extreme.

The *Legendary* Super Saiyan is motivated by a crying infant! He is a literal giant f***ing baby!Those are inconsistent image sources, for one. The anime version of Trunks does look more extreme.
My main point is, (in the manga) Trunks' muscles aren't really big enough to work as the sole reason he loses speed. We've got too many diverse body shapes that show no bearing on speed to buy into that idea.
The only real merit I see in different super saiyan forms is if the universe 6 saiyans are going to stay around as The Rival with the constant question of whose is better, and even then, making their forms different because they're female seems silly.
And I think saiyans have more than enough forms as is. There's already the possibility of furthering the werewolf monkey form if you want an alternate and that would really be more interesting than Weight Taller.
Buldogue's lawyerNot really. There's still a possibility that Babidi could drain the energy from humans. Trunks alone would provide a lot (even if not as much as Gohan), and once Earth repopulated, it's theoretically possible to get it from the human population if he had enough patience.
Gero really only delayed things in Trunks' time.
Of course, this is Babidi, so I doubt he does have the patience really.

Check out my art if you notice.Okay, so in the latest episode: the Superhuman Water is a misnomer, the purple goo is actually called Commeson and was originally created as a weapon by beetle guy's species. It covers people, drains them of all their Ki, and copies a bit of their personality as well. The person drained dies in 3-5 minutes.
Goten and Trunks form Gotenks and try to fight Copy Vegeta, but even in Super Saiyan 3, they are brutally outmatched, despite Copy Vegeta only taking Base Vegeta's strength. Goku teleports in and stops Copy Vegeta from dealing the final blow. Goku initially doesn't know which Vegeta is which: the purple goo one, or the normal one that's just kind of fading away. The Copy of that alien pirate is apparently the main one, and tries to force Copy Vegeta to absorb Goku, but Copy Vegeta disobeys and destroys him. The episode ends on a cliff-hanger with Goku and Copy Vegeta about to fight.

It's not extreme in the context of Dragon Ball. There are plenty of characters whose muscles are more extreme, even when factoring in their larger build/size, and it doesn't seem to worry them at all.
On Trunks and Super Saiyan 2 - I think it's more likely Akira Toriyama won't mention Super Saiyan 2, and he'll just be stronger than expected as a Super Saiyan 1. Toriyama doesn't seem really interested in Super Saiyan 2 anymore, and it is so obsolete that it would do little to make Trunks strong enough to matter.
Franky, between the multiple sources we have, Super's power levels are so fucked up I can't really anticipate what Trunks will have except that Toriyama doesn't seem interested in 2 and 3 anymore.
