It really doesn't. I mean, in every example I've seen in video games, an overflow error for a character or mon's level results in you getting a godly powerful Level 1 character.

Videogames generally can only count certain numbers so high, and when the number exceeds their capacity to count, well, it has to start over from zero because it doesn't know what to do.
For instance, in Diablo II, if you exceed 32767 health, then your health orb would overflow and give you a second health orb that appears to be permanently empty, because even though you have 33000 health, the game read up to 32767 and freaked out because it had no idea where to put the extra 233, so it replaced the '32767' before it with the overflow of 233, so your health orb reads as if you had 233/33000.
Oddly enough, sometimes when you're damaged enough that your health drops below 32767, your health orb begins to work normally. Other times, however, when your health hits 32767, you just die immediately.
Similarly, damage is capped at, roughly, 83k for most types. Magic has an inexplicably lower cap and Poison damage is capped per frame, so it caps at something like two million damage per second.
If you were to hit an enemy and deal 90k damage on physical damage alone, the game would count up to 83k, freak out because you're not supposed to be able to go beyond that, and start counting the damage from zero again, ending up with you only dealing about 7k damage to the enemy.
Now normally those numbers are plenty generous, but I used to play Median 2008 and Median XL back when hitting those numbers was easy, and there was a time when we actually had to manage our damage boosting items because we were hitting too hard and dealing no damage because of it.

It also made me realise how few actual feats we saw after Freeza. I mean, I understand why. Having random exposition on how many planets are getting destroyed or whatnot makes it hard for me to take it seriously. And after seeing this episode...I think I prefer the 'power scale communicated by transformation' method. It may be lazier, but it's less ridiculous.

Beerus says he should, while beating him up to Goku is having a blast as a god, seems to be fighting evenly with Beerus, completely misses the point!
That point, or rather points being that a) Whis was right and Beerus's prophetic visions tend to be inaccurate, b) Beerus is way out of Goku's league, Whis is way out of Beerus's and there is someone else out there, beyond the universe as established, that Beerus thinks might be even stronger c) Beerus still thinks Goku did something genius despite Super Saiyan God being Overrated and Underleveled, prompting him to spare Earth.
The point where Goku briefly starts to do better in the fight is when god's time limit runs out but by some subconscious action manages to retain the godly power anyway, allowing him to get few hits in because Beerus Didn't See That Coming. That was the climactic moment of their rematch, what set up the death ball absorption scene. Why change that?

I'm not sure why you keep saying that. It being much smaller than our universe doesn't mean it isn't still unbelievably enormous.
And also, why are you taking that diagram to mean that it has limits. Just because it shows the basic set up doesn't mean there's an actual edge at which point you can leave the universe. for all we know it might well not be smaller than our universe.

It has a bare minimum of 32 galaxies plus heaven, hell, the realm of the kaioshin, the realm of destruction and a few other oddities. Assuming Elder Kai was only talking about half of that bare minimum of galaxies and his own realm, that's still more than nothing.
All the same, it's an odd place to jump to. Yeah, Buuhan was technically a threat to the universe and King Kai told Vegeta that when using the spirit bomb they wouldn't just be talking to Earth but all of space, it's not without precedent, but when talking about the 'mundane' cosmology, Dragon Ball went from planet, to stars, to galaxies to universes? Why not planet, to planet systems, to stars, to star clusters, to galaxies, to galaxy clusters, to super clusters to universes? Hell, the second to the last even has "super" in its name.
And that's another thing. Even with such a small amount of galaxies, even if Cell was strong enough to destroy the sun, it would still take him a ridiculous amount of time to destroy the universe. And on a universal scale blowing away the sun really isn't that impressive, it's just a medium sized star. What's Cell gonna do when he teleports to a planet orbiting the Dragon Ball equivalent of VY Canis Majoris or something?
