The nameks have internal mechanisms that use water as medium to pull tiny organisms from the demon world, which are then instantly digested. This connection with the demon world. There are in fact demonic algea that swim the waters of the demon world, feeding off of the energy let off by this process that harvest the organisms the nameks feed on.
Edit:Nameks were never universally demons. King Piccolo and his spawn was, and his other half was God. Which later turned out to just be Earth's god.

Best case scenario, they would be absorbing particles from the air to construct their bodies, not water. That's not what was said, though, so Namekians just have magic biology.
