So did Vegeta. The tags' assertion that Vegeta would be all frustrated because even Yamcha beat Goku once but Vegeta never has misses the point that Vegeta DID beat Goku - and did so while Goku was at the top of his game, unlike Yamcha whose victory was brought on by Goku's starvation.
Yamcha won a fight against a starving Goku, while Vegeta won a fight against a Goku in full health who could raise his power level to 400%. Vegeta's frustration wasn't about never having beaten Goku; it was about trying to catch back up after Goku miraculously skyrocketed past him on Namek.
Vegeta eventually lost on Earth to the combined efforts of Gohan, Krillin, and a little bit Yajirobe picking up the fight where Goku dropped it - literally in Krillin's case, picking up the Spirit Bomb from Goku directly - but simplifying that as "Goku beat Vegeta" is like saying that Tien beat Nappa because by the time the arc was over, Nappa was defeated, and Tien contributed to that.

Goku blasted Vegeta nearly in space in the first confrontation, then Vegeta had to resort to creating his own moon so that he could transform in a Great Ape and preceded to dominate Goku. But he didn't defeat him. Even when Goku's legs were crushed and he couldn't move anywhere, he could still blind Vegeta in one of his eyes while he was in his Great Ape form. But, to far, after Goku shredded his body overusing the Kaioken and failing to use the Spirit Bomb
And in round two, the fight postponed due to Majin Buu awakening and the fight was declared a draw.
Without outside interference, though, Vegeta would've defeated Goku, so they're technically 1-0 in Vegeta's favor.
The other was never finished, but Goku could've won that fight at any time by going SSJ 3 (though it would've probably woken up Buu instantly).

Dude. Dude. Goku lost the first fight. That bit where he shoots out one of Vegeta's eyes was a "going away present" because he knew he was done for.
And as for the fight in the Buu Arc, Vegeta was the one that left that confrontation standing.
The point of this being brought up in the first place was Vegeta has technical wins over Goku, but he doesn't care about those.

Hell, both Roshi and Tenshihan beat Goku on technicalities as well (well Roshi's is probably the most legitimate win of the three), but they went through the same thing.
Goku is funny in that way. He's the one who lost, but he doesn't care, but also becomes stronger than the guys who he lost to.
One Strip! One Strip!Goku outright admitted defeat to Vegeta after his last attack. The Gohan, Kuririn and most importantly Yajirobe saved him.
I wouldn't count their second fight since they agreed to set it aside.
Only Ten's victory was technical, Roshi and Vegeta completely won. And Ten's victory was hilariously hollow, he himself said he didn't really win.

I think the real problem for Vegeta is that a guy he quite literally stomped suddenly became the legendary warrior of their race.
I mean, he says it enough time. Low class commoner vs the MOTHER FUCKING PRINCE OF ALL SAIYANS!!!! And yet, who becomes a super saiyan and who gets left in the dust.
Goku surpassing the people he loses too (legitimately or not) is a thing really.
