I'M MR. MEESEEKS, LOOK AT ME!Dragonball fights only lack explanations because there's usually nothing to explain, it's the same shit that's been happening for over three decades. Sometimes that works, like in the early fights or the Saiyan saga ones, but it's been suffering diminishing returns over time.
Not that they lack *exposition* though - usually King Kai, or Master Roshi going "Goku has surpassed limits I didn't think were possible" or the audience going "these are power levels we've never dreamed of". Heck, power levels in general are this. Screw showing someone's powerful, there's a direct numerical readout of how much we're supposed to be afraid of them. Jojo will *explain* things a lot, but only things that are very difficult to show.
As for the "every fight is a Jojo fight" it's more like every fight is a Fist of the North Star fight, and that manga inspired multiple linages. Dragonball went in one route, Jojo after part 1 went in another, and almost every shonen either follows the first route, the second route or a sort of mix, like YYH which has a large Jojo style section for most of the Chapter Black arc but is otherwise clearly inspired by Dragonball Z.
Your basic five most influential shonen are: 1. Fist Of The North Star 2. Dragon Ball 3. Jo Jos Bizarre Adventure 4. Yu Yu Hakusho 5. N Aruto

I third Jackie Chun V Goku being really amazing - though I like Goku V Tien a teeny bit more mainly because the stakes are a bit higher.
Also, a lot of Jackie's techniques are gags, not to say that's bad, that's part of the charm of the fight and they're very unique, but Tien's moves feel a lot more dangerous.

Goku vs Piccolo Jr. was pretty nice as well. Those are probably the best fights of the Pre Saiyan Saga era.
One Strip! One Strip!Throw in Vegeta vs everyone and Gohan V Cell and you probably have the best fights in the series.
(Though I will tip my hat to Goku V Krillin (22nd Budokai) and Tien V Yamcha for also being pretty good.)

With Cell they made the wise choice of making his transformations require input.

You know, I wonder why we don't see Goku using Instant Transmission during a fight more often. He rarely does it, and we now know he can do it while charging an attack. That should have become a staple of his fighting style.

I think it's because his opponent can adapt to it?
I know this is kinda of a bad example, but in GT Super 17 managed to adapt to the instant transmission by his hearing, it only worked once against him and that was when he was distracted.
