He might not know (or, rather, care) about good and evil, but he does know what things he's been thinking about and such. Hence him deciding to go along with Big Wolf Guys plea to spare the universes if he wins.
Not that I think Omni-King would be particularly difficult too manipulate but it seems like a very dangerous playing with fire sort of thing, and so far we don't really know what the GP would get out of it.

Zen'O is being portrayed mostly as innocent, not really caring much about good or evil because he doesn't really understand them. I imagine the Grand Priest is the guy who mostly runs the multiverse on a day-to-day basis.
Makes me wonder where Zen'O came from. I wonder if it's possible that Zen'O is not the original creator deity... maybe the child of the creator? It would make more sense than this little childlike critter creating entire universes, when he seems to care nothing (positive or negative) about the people within them.

He's only become relevant with the reveal of the Multiverse. Omniking has been said to be, bar none, the strongest thing in existence.
I don't get why people keep expecting them to renig on that seeing as Omniking has never been framed as a fighter anyway. He's not an opponent to overcome, at least not in the traditional sense. I'm I also still don't get assuming their needs to be some big, creator of the multiverse.

Well, there was no huge need for Zeno either. Could've had the universes jointly ruled by the Kais and Go Ds, or even just the Grand Priest himself as ruler, no Zeno required.
Just saying I wouldn't be too surprised, considering we're probably going to get more lore on Zeno and his origins, assuming he didn't just spontaneously come into existence...
I'm not saying there's no chance of something like that getting revealed, I just find it weird how ever since he's been revealed people have been looking for one reason or another to go "There has to be some real absolutely powerful God/creator of everything above Omniking." No, there really doesn't.
Likely due to a recent trend from this franchise to consistently introduce newer, "even stronger" top guys.
Like way back when Frieza was the strongest in the universe -> but there was some plausible escalation because we went from him to an android that was 1/6th Frieza. Then Buu entered the picture and it was completely inexpllicable, but hey, any trick will work once.
But then Beerus entered the picture and he chewed Buu like a piece of gum, kicked Gohan in the stomach, and karate-chopped a Super Saiyan 3. He was an even greater god than the Supreme Kai, who was introduced as being "above King Kai" who was "above Earth's guardian."
Then there was a Super Saiyan even more legendary than the last Super Saiyan of Legend. But no, wait, Freeza actually has the ability to be just as strong with just four months of training.
But no wait, we have Super Saiyan Blue.
But wait, Anime!Hit and Manga!Hit can apparently punch Super Saiyan Blues to death. And that's when he's not even trying, that's Hit's Cherry Tapping strategy. Well at least Goku can't be any stronger than Beerus, who we know is weaker than Whis. And Whis is The Strongest One There Is.

And then suddenly we have more angels any of whom could be stronger than Whis. But hey, at least they're the strongest ones right? There's a ceiling now, right?
Enter Grand Priest, the Even Strongerest One There Is.
Why would we assume that "Zeno" is the top man when once upon a time we all thought Kami, King Kai, Supreme Kai, Beerus\, and Whis were the top guys?

My guess would be that, if there was an original creator deity who is not Zen'O, they're not around anymore. That doesn't conflict with Whis saying Zen'O is the single most powerful being in existence.
Well, Gohan is arguably more of a hero than Goku.

It be a pretty good return for who was once the strongest unfused being in the universe. Hell it might even teach him to stay a little in shape cause while I have no problem with him being a retired family man there is also nothing wrong with lifting weights once in a while.
I hope Jiren beats Goku though.
