Ah a clue.
In the manga version - and boy was I wrong about Trunks handling that fight - in the manga version the Supreme Kais are dead, and Black was watching the whole affair. And 'hey, he actually shows relief that he found a timeline where the God of Destruction doesn't exist. So I guess he's afraid of Beerus just like everybody else, huh.
But wait, Black has been Marty Mcflying his way through the multiverse looking for a universe without Beerus so he can wipe out all of the humans? What a wuss. I mean a smart wuss but still. And does his plan actually involve eradicating mankind from "every timeline" then? Or is he just cutting his losses and looking to kill off mankind in at least one timeline, and Trunks's drew the short stick?
And I know the translation is a bit iffy on this, but is Zamasu going after all "mortals" or all "humans." Because while that sucks either way, Zamasu is... he's batdamned godshit insane if he thinks can kill "all mortals." Sure he can maybe blow up planets but given that Black is personally executing people on the fly for the hell of it instead of just blowing up the planet this mission is going to take forever to complete.
...though I suppose he did just wish for immortality.

Zamasu, for all his posturing about how mortal beings are dangerous and must be wiped out for the good of a just utopia, is really doing this because he finds their existence a personal insult to his perceived moral superiority and their potential an insult to his sense of physical superiority. That this was all kicked off because a mortal dared to best him in a fight (and not show complete deference to the gods in general) is very telling.
He's like a mad king putting his own peasantry on the block because a few of them dared to talk back.
He has the time, sure, but him being perfectly fine with methodically wiping out everything that isn't a God one by one instead of doing it the practical way in one straight shot - especially since he and Black are more than capable of doing so - just shows how much of a sadistic and vindictive hypocrite Zamasu really is. He's making them suffer for daring to exist, laughing all the way.

This is actually a small plot hole. In the movie and Super, the Supreme Kai didn't know who Beerus was. Old Kai had to tell him, so Kibito's statement about killing Buu is Beerus' job makes no sense since they didn't know about Beerus until recently.
Also, as it has been said many times, Zamasu and Black doesn't want to destroy planets, just kill the mortal. Black expressed grief when he saw how damaged the Earth was because he was trying to kill the insects known as humans. Also, Black looking for a timeline without Beerus makes little sense since he can easily kill the Supreme Kai himself and he did just that to the other Supreme Kais in the other Universes. Beerus, by his own admission, shouldn't be the strongest God of Destruction.

Hmm... interesting it seems as though Beerus has met Black before. Blacks words seem to imply that Beerus has stopped him before. Also a theory on what may be Zamasu's end game. [[Spoiler: Zamasu is planning on making the Future Trunks timeline the dominant timeline such as if in the dominant time line all mortals are dead the effects of it will spread to all the other timelines and all mortals will disappear.]]
Actually it can make a bit of sense, the point in time that we see Black talking about there being no Beerus most likely happens before he kills off all of the other Supreme Kais and Go Ds of the universes in that time-line and since Whis and Beerus seem to be a bit more hands on than the others of their group they could always end up stopping him some how which is why he searched for a specific time-line that didn't have Beerus in it.
You mean like causing a Time Crash that causes all the timelines to merge?
In the manga, Black tells Trunks he murdered all the gods. Making him happy that someone killed the U7 Supreme Kais weird, since killing them shouldn't be an issue for him. And him making Beerus as troubling specifically is even weirder since given the conversation between the Supreme Kai and Kibito, Beerus is one of the laziest gods since he didn't kill Majin Buu who wiped out most of the gods. By that, Black could have wiped out half of the universe before Beerus did anything.

That extra "T" actually makes the combined name more even...
