Unused quotes should be put on a Quotes Wiki page (just replace the namespace in the URL of the wiki page you are making a quotes page for with Quotes/) or, if they don't have an article, on Quotes Looking for an Article.
Image captions are discussed elsewhere and have their own thread
in the Image Pickin' forum.

Oh, I was gonna say the opposite!
Concern was raised about Cavalry Betrayal's quote not being indicative enough, so here are a couple from the quotes page that might be clearer.
I like the second.
and Hellsing quote's swapped in.
I've hated the quote on Perpetual Motion Machine for a while; it needs a note to explain it, which is distracting at best. How's this one?

Indeed it is. The headers should mention both as related tropes instead.
For And You Thought It Was Real, how about this dialogue from Galaxy Quest:

~Lapsem changed the quote on UsefulNotes.Play Station 5 from the marketing tagline to some quote from a random work.
If a tree falls in the forest and nobody remembers it, who else will you have ice cream with?
I figured that it wasn't without precedent, as the Coleco Vision also doesn't have the tagline as its page quote. I also wish it to be known that I didn't completely remove the tagline from the page.

Literature.Jabberwocky is quoting the poem in its entirety. Now, that's obviously not a copyright issue because of the age of the work it comes from. It is however far too long for a page quote. How about just limiting it to the following:
Did gyre and gimble in the wabe;
All mimsy were the borogoves,
And the mome raths outgrabe.
