First encounter- you'll die every time.
No two-ways about it.
Second time- he's kind of hard.
Most of the danger is the breath attacks.
Oh- and make sure you break the Primordial Crystal before fighting him.
It's in the same room as the second boss fight.

They can curse you, and they're quite damaging.
Just make sure you get up close and to the sides or behind.
Hell- go for the tail.
The Moonlight Greatsword has some badass R2's. And is a nice Sorcery build weapon.
