True, but it would shatter what little faith remained from the Republic for the Jedi Order. If you kill your own leader and try to get a replacement you like, that's a military coup.

As for the Core Worlds, even those that knew the Jedi exist didn't usually understand the Force. For them, the Jedi were a bunch of monks that took missions from the Senate and lead clone armies and said mystic stuff. Actual knowledge of the Force was closely guarded at the Jedi temple. Palpatine was able to sell the story of the Jedi being these treacherous fanatics who went mad with power and were secretly manipulating the galaxy. The Jedi weren't helping their image in that regard, bombing planets, loosening their morals, taking active military commands.
Han probably understood that there were these guys called Jedi, but doubted this old geezer was one, and even if he was he'd never believe his superstitious nonsense.

There's this novel series called Fate of the Jedi which really well illustrates just how little the average person understood the Jedi, and how easy it was for the Empire to impose their version of events.

Even without being a Sith Lord the guy had dirty deals all across the galaxy. Specifically his deals with the Banking Clan. If those were brought to light the Jedi could recover some in the public eye. And if push came to shove they could have ousted Mace as going rogue and "exiling" him to show that they aren't just butchers.
Which might have lead the series in an interesting direction.
And there's also the fact that George doesn't often consider the deeper implications of the things he writes....

but of course Palpatine actually knows about this and uses it to make it sound even more like "defenceless old man about to get chopped to pieces by four Jedi, saved by a True Hero"

for example: he planned for greedo to appear as a child during the pod racing stuff, with his friends saying how bad a shot he is with a blaster. You know, in an effort to make sure people treat the edited versions of the original trilogy as canon so that it would suddenly be explained how greedo missed a shot at point blank.

Dave Filoni, the main mind behind Clone Wars and probably the one guy who consistently argued sensible alternatives to Lucas over the entirety of the show, had some interesting ideas about what would have happened if Palpatine had not survived Mace.
Mace would have gone to jail. He went right to the head of state and chopped him into itty bitty seared chunks, with no real evidence that he was a Sith. Hell, the general population didn't know what a Sith was - Jedi deliberately kept it secret from most. There are no cameras or listening devices in the Chancellor's private office, for obvious reasons. He was pretty much universally beloved as the Chancellor who got shit done, even though it was always to counter the Separatists that he secretly lead as well. So the trial would be an uphill battle for the Jedi.
