Rick Rubin is also, it should be noted, an incredible jackass. The man's good at what he does, but I would never want to work with him.

I also recommend K-Murdock from Panacea. He came out with an album that culled samples from various well-known anime and did another with Random of Mega Ran fame. Kid Called Computer and Soundtrakk would also have made my list had they actually worked with more than one rapper, Sadistik and Lupe Fiasco, respectively.
